👨‍🍳 What you’ll need:
Ingredients
Pork belly - 650-700g
Salt - to taste (for marinating)
Dried Guntur chillies - 40g
Fresh ginger - 20g, chopped
Garlic cloves - 8-10
Onions - 2-3 medium, chopped
Cinnamon stick - 1
Green cardamom pods (elaichi) - 5-7
Black peppercorns - 15-20g
Cloves - 7-8
Bay leaves - 2-3
Turmeric powder - 1 tsp
Kashmiri red chilli powder - ½ tsp
Cumin powder - 1 tsp
Apple cider vinegar - 200ml
Vegetable oil - as needed
Cumin seeds - 1 tsp
Fenugreek seeds (methi) - ½ tsp
Mustard seeds - 1 tsp
Water - 250ml (plus extra as needed)
Jaggery powder - 1 tsp
Green chillies - sliced, to taste
Fresh coriander - for garnish
Process:
• Marinate the Pork: Season the pork belly with salt and refrigerate overnight.
• Preheat the Oven: Preheat the oven to 140°C (284°F).
• Prepare the Pork: Wrap the pork in aluminium foil and place it in a tray. Roast in the preheated oven for 1 hour and 40 minutes.
• Make the Vindaloo Paste: In a grinder, combine dried Guntur chillies, ginger, garlic, chopped onions, cinnamon stick, cardamom, peppercorns, cloves, bay leaves, turmeric, Kashmiri red chilli powder, cumin powder, and salt. Add 200ml apple cider vinegar and blend into a smooth paste.
• Cook the Masala: In a large vessel, heat some vegetable oil over medium heat. Add cumin seeds, fenugreek seeds, and mustard seeds. Sauté until fragrant. Add the vindaloo paste and mix well. Pour in 250ml of water, stir, and let it simmer on low heat.
• Prepare the Pork: Once the pork is done, remove it from the oven. Cut the pork into medium chunks, discarding the top skin (set it aside). Add the pork chunks to the masala, mixing thoroughly.
• Crisp the Pork Skin: Trim the reserved skin and add the remaining pieces to the oven tray. Increase the oven temperature to 250°C (482°F) and roast for 15 minutes until crispy.
• Finish the Vindaloo: Add jaggery powder and sliced green chillies to the pork masala. Let it simmer for a few minutes. Garnish with fresh chopped coriander.
• Serve: Plate the vindaloo and top with the crispy pork skin.
