Puchkawalar Aloo Dum
Ingredients:
2 cups boiled and peeled baby Potatoes
1 tsp cumin seeds (Jeera)
1 tsp each of Turmeric Powder (Haldi), Red Chilli Powder, Cumin Powder, Coriander Powder
Paste of 1 Onion, 2 Tomatoes, ½” Ginger,
1 Green Chilli
1 tsp Sugar
1 tsp Aamchoor Powder
2 tsp Tamarind Paste
1 tsp roasted Cumin and Red Chilli Powder (Bhaja Masala)
4 tbs Mustard Oil
Salt to taste
Chopped Coriander leaves to garnish
Method:
Heat 2 tsp Mustard oil in a pan. Sprinkle Cumin seeds and cook till light brown.
Add the peeled potatoes. Sauté well. Add ½ tsp Turmeric Powder and Salt and cook till the potatoes get a light brown colour. Keep aside.
Heat the remaining oil. Add Cumin seeds and Cumin Powder, Coriander Powder, Turmeric Powder and Red Chilli Powder.
Add chopped tomatoes. Add 1 tsp ginger Paste and sauté for 2-3 minutes. Later add 1 tsp Sugar to caramelize. Add salt to taste, Aamchoor Powder. Sauté till the Masala leaves the sides of the pan.
Add fried potatoes & mix them. Add Tamarind Paste, 1 green Chilli. Garnish with chopped Coriander leaves and Bhaja Masala.
Served best with Luchi or Puri.

Finally I managed to make your Puchkawalar Aloo Dum recipe & came up with an unexpected result. This dish was turned into heavenly delicious. Intense taste & aroma of spices ,tangy, its heat left some unforgettable aftertaste to everyone. Thanx

Reminds me of Dhakuria Lakes and Rashbehari Ave in Calcutta. I miss that! The smell of the dry sal leaf bowls adds the last authentic touch. Lovely recipe, many thanks! fyi - Background music is really annoying. Should never be added to any DIY channel.

I have two questions. First you added whole cumin, cumin powder and lastly roasted cumin powder. Will it not smell too much of cumin? Second. You addted tomato, then mango powder (aamchur) and then tamarind paste. Will it not become too sour? Kindly answer.
