As a part Japanese vegan I have to give you major props because I've tried rolling with quinoa before and always failed hahahahah!! Also, I saw this product at expo west last year that was quinoa made specifically for sushi--I'm pretty sure they were a Canadian brand so you might see it around at stores!

To cover my sushi rolling mat for making the "inside out" rolls, I put the whole mat into a gallon-size ziploc bag. I wash and reuse these bags essentially indefinitely, and I have so many other uses for them in my kitchen already.

I learned a tofu hack to make it more crispy and have a more "meaty" texture. Take it out of the package and drain the water off, then freeze it and when you thaw the tofu, so much more water is released and that makes it have a different texture when cooked.

Before flipping the rice upside-down, sprinkle it with black and white sesame seeds. It will help a bit with containing the stickiness as well as adding extra flavor, nutrition, and eye appeal. I'm going to do this with tri-colored quinoia! Thanks for the idea!

@@Simnettnutrition i learned from High Carb Hannah that if the sushi rice (or quinoa) is still warm when it hits the nori, it will accentuate the "fishy" flavor. i tried it and it seems to be true for me. you just have to be patient and wait for your rice/quinoa to cool to room temp. ;)

For anyone who makes their own kombucha at home, hear me out. Use your matured kombucha scoby as a tuna / salmon replacement. It works wonders and goes great in sushi. Be sure to marinate it with your favorite sauce beforehand. Teriyaki sauce and kelp flakes go great as a marinade. Kombucha scobies resemble a nice fish like or squid texture and the subtle sweetness of it pairs well with the rice and crispy vegetables.

I made these sushi rolls. I did the tofu sticks with BBQ sauce and tahini. I added figues syrup, apple cider and tahini to the quinoa to make it more sticky. Even with that the reverse rolls didn't hold very well. Overall, they were very good and even better the next day, the flavors had mingled together. They are very filling, a meal in itself.My family liked them too.A revelation.

This looks amazing! We use a zip lock/freezer bag that we have cur the zipper off of and cit open so we can wash and reuse so we don’t have to use plastic wrap.

You inspired me to give this a try as I had no sushi Rice in the pantry and my family’s eyes always light up when I say sushi night! I needed to add more water for cooking and squish the quinoa down a wee bit more I think as my rolls were not sticking together despite tight rolling. Nevertheless quinoa was a big hit with husband. Yay! Thank you for this great idea. My tummy is still full and I don’t have that white rice guilt.

Wonderful! I had looked up 5 other quinoa sushi recipes but yours was by far the most (only) helpful one! Thanks for being clear and using real ingredients and showing the steps = very easy to understand!! Tip: for inside-out rolls, after I add the rice or quinoa I sprinkle it with sesame seeds (or can use roe). Then, flip the Nori, add the veggies and roll as normal. I find it’s great for aesthetics, taste, and also keeping the inside-out roll together a bit better.

Hey Derek, thanks for bringing another way to make sushi to the people! I see your cutting board is slipping around! I've got 2 suggestions: in a pinch, you can put wet paper towels underneath to keep it from slipping, but I would recommend buying some non slip cabinet liner and cutting it to the shape of your cutting board. Works great!
