I have read all the posts here and still don't understand why you need to dry the nus after soaking. I would think they would grind up more easily with a little moisture (?). What is the purpose of drying the nuts?

i make my own butters from more obscure nuts/seeds or those that are too expensive already processed. i just made some sesame (tahini) and sunflower seed butters. it's incredibly inexpensive compared to buying in a store.

I'm making this recipe now. I'm at that half way point and waiting for my food processor to cool down. I had to find your video to make sure I wasn't missing anything. I'm also looking forward to making almond milk from the butter. I am a tad confused why it lasts so much longer as opposed to the normal way (using a milk bag), when you're still adding water. What am I missing? James, I do hope you make more videos! They have been quite helpful.

Hey Wilma, I'm glad you'e enjoying the videos :) You're only adding water when you make the nut milk, not when you make the nut butter, so the butter lasts longer (because no water).

Ok, got it! I misunderstood. I thought you were saying almond milk made from the butter would last longer - which didn't make sense to me. Thanks so much for clearing that up! I'm looking forward to trying making almond milk this way. I made my nut butter and added it to a favourite recipe today. Great tips James, thanks again!

Hi Russell, Is it completely necessary to dehydrate the nuts after soaking, either with a dehydrator or using the oven? Or could i do something else to achieve, even just letting them sit to naturally dry a little? Thank you

The only reason to dehydrate or dry nuts after soaking is for preserving them, or if you need to use them dry in a recipe. If neither of those is the case, then you don't need to dry them at all.

Holly Forrest usually just overnight, which ends up being about 8 hours. 105 to 115 degrees F in the dehydrator.

Not sure though cause I prefer to not heat it, but it worked for me once by slowly heating the nut milk. It sort of thickens.

I am soaking my almonds as we speak. Glad I found you. Interesting that you used the whole almond for the almond milk and didn't strain it. I really like that. I don't have a processor but do it in my vitamix. I was going to try making almond butter in the blender and am wondering if I can do the almond milk like you did, only using the Vitamix. I'm going to try. Thanks.

houndjog Not great. I tried drying them in my oven but, may not have been dry enough. It got to that "sticks together" stage and wouldn't go farther. I've been reading up on other sites and they all say that you need really dry almonds. For me that defeats the purpose of my buying organic, raw almonds, since I don't have a dehydrator....yet. I think I could get them dry enough if I left them in the oven on the lowest possible setting with the door ajar. Electric stove. Good luck in your endeavors.

Really? I've made dry nut butters in both the Vitamix 5200 series and the Oster Versa without problem. Sure I need to use the tamper, but that's not really a problem. The hardest part is probably getting it out of the blender. Especially around the blades.

I love raw almond butter and making milk, but are raw almonds toxic or poison? Does anyone know a good quality brand of almonds or nuts? I even heard that organic nuts could be toxic, even if labeled raw. I guess I am getting paranoid. It's easy to get hungry on raw and I also like to avoid milk creamer in coffee. Raw Food World used to have organic nuts but they don't anymore.

I've never heard of almonds being toxic -- I'm sure you'll be fine with the highest quality organic you can find. Just relax into it, enjoy it and don't be afraid to eat what you need if you feel your body wants it. It's not about sticking to something rigid if it's not working for you. If you're hungry, bring in some cooked foods like quinoa or butternut squash
