It looks delicious. The waxy red potatoes are absorbing that rich mayonnaise dressing well. I normally use Russet potatoes. They're a lot more flavorful if boiled in their scrubbed skin.

theres this potato salad this sandwich shop has and it is the most amazing potato salad i have had. i dont think this recipe could even reach its level. especially with its ew bacon.

You overcooked the eggs, and 2 c of mayo was too much, even with 3# of potatoes, eight eggs, four times as much celery and a whole red and yellow onion. More salady than potato-y.
