I found this foolproof way to hard cook eggs. Cold eggs, cold water in a covered pan. Bring to a boil, turn off heat, let stand at least ten minutes. Drain, fill pan with cold water, let eggs cool a bit, drain, then put the lid back on, and shake the pan. Shells will practically fall off. BTW, I love the idea of adding an apple.

This recipe is TRULY a winner. The first time I made it, I made it with baked potatoes; today I use Millie's suggestion: "Boil the potatoes in the jackets." So, I pressure-cooked them, and the peelings almost fell off. Personally--when it's just for me, I like to leave the skins on. The only thing I did different was put the diced apple in a couple tablespoons of lemon juice so they wouldn't turn BROWN (💩) in the salad. I'll garnish it at potluck tomorrow with the fresh dill and some scallions on top.

Living outside the USA for one year ! Have tried so many of your recipes and not once have I been disappointed! Peeling boiled egg hint - when they are cooked through drain hot water , leaving three or four Tbs of the hot water bang them around until shells are broken ( the hot water will get a bit under the shell) then fill the pot with ice cubes fill with cold water swirl and that expands the egg shell and in many cases the eggs peel themselves- But sometimes not - but still it makes for a bit less work ! My job in a commercial kitchen was to boil and peel 36 eggs a day - love your program ! (

I learned in my grade school, Home Economics class exactly how to peel hard boiled eggs. It’s🎉 a cinch, guaranteed! 😅Here’s how: As soon as the eggs are hardened after boiling, immediately crack the shells, don’t peel them, only crack them. Place the cracked eggs in very cool water. Wait for a very little while, or at least till the eggs are cool. Start peeling them, snd the shell virtually falls right off. It’s a technique I never forgot. You stated, for you, it’s a strategic process. Try this maneuver and I guarantee, you’ll feel quite different about peeling hard boiled eggs. GOOD LUCK ❤ Happiness, Ginny Derome

John, you simply are the best cook ever. You asked about what type potatoes you used. I'm thinking they are yukons. They come both in baby size and large size, I use both. I could be wrong but from what I looked at, I would say they're Yukon potatoes. I made your recipe and I really loved it. My family didn't care much for them, oh well, they're used to chopped dill pickles, plain on mayo mixed with miracle whip (which I hate). And they hate celery. So from now on, I"ll be making myself my own John's potato salad. I love all the "fresh" items and produced you use. Linda from Texas. Hint: I did make one similar to yours, only difference was the potatoes were backed, covered with olive oil, garlic oil and bacon grese (potatoes unpeeled). I received the recipe from The State Fair of Texas. Everything else in it was the same things you had in yours. Linda from Texas.
