I know it's not cool or sophisticated to admit, but this very basic fried rice remains one of my very favorite Chinese meals. I make it the same way you do, Marion (except I top the finished dish with a healthy squiggle of sriracha sauce), and have been cooking it for dinner every second week or so for many years. Watching you cook is always a joy, and I love it when you revisit one of these "oldie but goodie" favorites, because I know it will motivate a new group of viewers to give it a try. Thank you. So perfect! I have been chasing a fried rice that I used to order at a somewhat upscale restaurant that doesn't exist any more. no one makes it as good. I realize now that the xiaoxing wine was The Secret. And the white pepper. Pretty much no other fried rice recipes include those! But they are key

This is good but I personally admire the type of chinese fried rice where the egg is kind of coating the rice, more like scrambled eggs. Most people don't do it this way though but you do get this in restaurants. It makes each grain of rice more flavourful and eggy :)

YES they do this by incorporating the egg yolk in the rice prior to cooking, making sure each grain of rice is beautifully coated in that creamy yolk. from then on, you just cook the rice in the wok just a tad bit longer!

Agree with her steps. First the garlic and onion Then the egg (then this next step is what usually I've done: pour the sambal, best with sambal terasi) Then the rice ... The aroma of garlic+onion+egg+sambal will blend in with the rice perfectly. And yes, fried rice with hints of burnt/toasty fragrant, love it.

A little detail, but I love that you fried the egg along with the Onions at the same time. Many people and videos I’ve seen seem to fry the egg first, then take it out of the wok to put on a separate plate for later. But I feel like that loses a lot of that ‘egg scent’! I love it when the egg REALLY mixes the entirety of itself in the dish! It’s also how my Indonesian mum taught me too 😃

Oh yum...thanks again for another recipe and fabulous tips. I have one burning question always wondered do portable hot plates have more BTUs than my stove. I am finding that I am not getting enough heat ( I have a gas stove ) . Toying with the idea of getting a hot plate like you are using......

Looks awesome. The only thing that came to mind, because Kenji Lopez and Chinese Cooking Demystified recently addressed it, was to pour the sauce onto the wok, not the rice, to get greater caramelization.

ooooh ive never added the sesame oil last! good to know! and letting the egg cook the flip onto the ingredients to then chop so much smarter than cooking then trying to break up the way I ha e been! can't way to implement these techniques! best part i have old rice in the fridge. I can do this tomorrow!
