Thanks for showing how easy it is to make cheese. If you don't have rennet you can use lemon juice and it will make curds. We call it farmers cheese or cottage cheese if you leave the whey in it.

Vorrei chiederle: ho visto già diversi video in proposito, c'è chi usa solo il siero per fare la ricotta e chi ci aggiunge il latte, addirittura c'è chi ce ne aggiunge poco e chi invece tanto! Deve esserci pure una differenza in termini di resa o di compattezza. Me lo può spiegare? E poi: il sale non l'aggiunge per niente volendo mangiare la ricotta fresca? Grazie.

Vincenzo- First and foremost, I’m Italian and I love and support all things, people who are Italian. It’s how I was raised. I do like your channel and I watch and “Like” them. If I may, can I offer ONE bit of criticism. It seems that you devote a LOT of videos criticizing other peoples cooking. Why? I don’t know how others feel, but your BEST videos, are of You cooking. I enjoy when you feature your Mother, your grandmother cooking and telling stories. (This video is terrific- I’m learning something) Vince- please- cut down on criticizing others. She made a ricotta salata, she let it drain most of the water out. You can buy it like that a grate it on different pastas, or you could leave most of the water in and it would be much softer and smooth like you are more familiar with.

No, it's sheep's milk. (Sorry, Vincenzo, but that's what the video says: "latte di pecora") But you can use any milk.

I do, I have goats; I make fresh chèvre all the time and a few aged cheeses. I trade goat milk with my neighbor for cows milk now and then. Never tried to make a ricotta type.

Finally someone who shows how bro make real ricotta. It's full of videos with people making fresh cheese or cottage cheese and call it ricotta. Ricotta is not cheese. Ricotta means "cooked twice" and is obtained with the coagulation of proteins by cooking the serum left after making cheese. Even calling it "ricotta cheese" dear Vincenzo, is wrong. You can't, never, melt ricotta with heat. It will become harder with heat and eventually charr.
