We make our brine with water that is cold to the touch and it works fine. The main concern is if you are going to make it outside where the water can freeze in the lines.

You can use any regular salt you can get your hands on. Bulk salt, brine maker salt, Solar salt, etc... As long as it doesn't have any additive in it you are good to go.
