This recipe is amazing, I live in australia, there are some particular ingredients I couldn't find such as jasmine gardenia and kansui. So I skip quite a few ingredients, but it turned out amazing. Getting addicted in watching ramen making videos. Thanks for sharing. The whole family enjoyed the sapporo ramen.

thank you for your recipe! I made Sapporo ramen a couple of days ago, and it was my first homemade ramen ever! since I didn't find any pork bones, I used 1,5 pork flavored cube: I cooked the meat directly with water, cubes, onion and ginger (no dried shiitake, I didn't find them) for two hours. It was delicious!!!

When you say store for 5 days, do you mean store for 5 days and then use the sauce, or do you mean up to 5 days (not to be used beyond a 5 day time) And curious how many bowls do the measurements serve?

What is the combined weight of the kuchinashi water (148mL) and the egg ? since when we buy eggs the size can vary a lot. Thanks, really enjoy your videos.

If I can't find jasmine gardenia (kuchinashi), can I use saffron or use other natural dyes or kuchinashi also give it a particular flavor? Thanks in advance.

I've never used anything other than gardenias. Saffron can probably be used :)

Parmigiano is ultra high in umami, just like miso, so it's a way to boost the flavor. It's why you can use a chunk of Parmigiano rind in a soup stock or base, especially bean soups, to increase the flavor. Same thing happens with dried shiitake mushrooms.
