▶Ingredients
No quantities are listed because it is better to add any amount of seafood you like.
Mussels
Clams
shrimps
squids
White fish of your choice (this time we used gashira and renkotai)
120 g spaghetti
10 cherry tomatoes
80 g white wine
1~2 cloves garlic
red pepper
Italian parsley
olive oil
salt
Seafood brodo
The amount of salt in the pasta water is about 8g of salt per 1L of water.
*How to make seafood brodo
1) Remove the eyes from the fish head, fins and tail, and clean the bones under running water to remove any blood. Remove eyes from shrimp shells as well and wash under running water lightly.
Place 1/2 of an onion in a frying pan with the cross section facing down and roast until browned.
Put the browned onion, 1/2 carrot (peel is OK), 1 celery leaf and ① in a pan, add a bowl of ice and simmer over low heat for 1 hour.
Remove the lye during cooking.
5) After 1 hour, strain carefully with kitchen paper and use.
