The manapua man used to sell BIG ones-- do you think one could use egg roll wrapper instead?

you could but may have to cut it down to size with a biscuit cutter. The best wraps are the Korean round mandoo wrappers.

I've not done this but I taught a lot in schools, facilities, Narcissus festival contestants, etc. If you can organize a group in someone's home, I may be up to it.

Generally we don't use sauces but you can use oyster, soy, hoi sin or any combination.

Try Hawaii’s classic dipping sauce of Chinese hot mustard mixed with a little water until desired consistency. Then let it rest for 10 minutes or so for mustard to fully hydrate. Then slowly mix in soy sauce to your personal taste. Some like it more mustardy, with a hint of soy, others like it the opposite. I prefer somewhere in between. It’s kind of like what people do with wasabi and soy for sushi. This is a great dipping sauce for dim sum dumplings, saimin or ramen soup noodles, won ton and gau gee, egg rolls and spring rolls, and meats like char siu.

Will try later. I haven't used one but my sedddon and his wife make BBQ ribs and kalua pig. Ribs are cooked

Hawaii's Pickle Lady I have made the BBQ ribs, but not the Kailua Pig yet. I should get to doing that one at some point soon.

Will try soon. Never used one but the family makes kalua pig and fall off the bone BBQ ribs. It's cooked 25 min in the instant pot. Then brushes sauce and broils till done. We're going to do ribs probably next week.
