Recipe:
Dhalpuri (yield 23)
Ingredients
Dhal:
2 lb dhal (split peas)
1 tsp tumeric powder
2 tsp salt
4 tbsp geera powder (roasted cumin)
8 pimento peppers chopped
2 small bundles shadon beni chopped
2 heads garlic
4 tbsp oil
Method:
1. Add dhal, tumeric and salt to boiling water and cook for about 20mins
2. Strain dhal from water
3. Heat oil in large saucepan, add pimentos, garlic,shadon beni, dhal and geera powder and cook for about 10 mins
4. Remove from heat and grind dhal mixture in a food mill to form a smooth texture
Roti:
Ingredients
5 lbs flour
3 tbsp softened cookeen (shortening)
4 tbsp baking powder
1 tsp salt
1 tbsp oil plus 1 cup for cooking
6 1/2 cups water
Method
1. Mix dry ingredients and cookeen together
2. Add water gradually to form soft dough
3. Add 1 tbsp oil on top of dough, cover and rest for 30 mins
4. Divide dough into individual balls
5. Flatten each ball into disc and fill with dhal mixture
6. Cover and allow to rest for 10 mins
7. Heat tawa and roll out roti
8. Cook roti on medium high heat
9. Brush each side with oil while cooking
Curry shrimp
Ingredients
3 1/2 lbs cleaned shrimp
2 small tomatoes chopped
1 onion chopped
6 cloves garlic chopped
1 small bundle chives chopped
1 tbsp salt
1/2 tsp black pepper
5 tbsp curry powder
1 tsp geera powder
1/2 tsp tumeric powder
2 tbsp oil
1/4 cup water
4 tbsp green seasoning
Method:
1. Season shrimp with salt, black pepper and green seasoning
2. Heat oil in a medium pot, add tumeric powder, curry powder, geera powder, onions and garlic
3. Cook for 3mins on medium low heat
4. Add tomatoes, chives and water and cook for another 5 mins
5. Add shrimp and more water for desired amount of sauce
Baigan and aloo
Ingredients
2 baigan (eggplant) chopped
6 aloo (potato) cut into small pieces
2 small tomatoes chopped
1 onion chopped
8 cloves garlic chopped
1 bundle chives chopped
3 tbsp green seasoning
4 sprigs thyme
1 1/2 tbsp salt
5 tbsp curry powder
1/2 tsp tumeric powder
1/2 tsp geera powder
4 tbsp oil
6 cups water
Method
1. Heat oil in a large pot
2. Add onions, garlic, curry powder, tumeric powder and geera powder and cook for 2 mins
3. Add about 1/4 cup water, tomatoes, chives and green seasoning and cook for 5mins
4. Add aloo, salt, baigan and thyme and mix
5. Add water and cook until baigan and aloo are soft and cooked through
Green Seasoning: blend together 2 bundles shadon beni, 6 pimento peppers, 6 cloves garlic and 1 hot pepper
