The "watery" on the bottom is whey and your sour cream would stay thicker if you don't stir it in but move over sour cream with utensil and pour off the whey which is AWESOME for making breads ;)

To thicken it up like store bought, throw it in the blender, add a pinch of guar gum, blend and let it sit in fridge for an hour. Guar gum is a natural thickener. It will also give amazing slimy consistency that is delicious.

Around the 20 hour mark, it still seemed runny. I thought it had failed. But then I left it a few more hours and it started to thicken up. However, it didn't taste so 'sour', so next time I will add a little more lemon juice. Thank you for the easy recipe!

Yes! I believe they are pretty much the same thing, just different names. Here in the States it is called Heavy Whipping Cream in Australia and parts of Europe and other parts of the world it is called "Thickened Cream" :)

You are welcome, the cloth keeps stuff from getting in but still allows air which helps with the process. The rubber band keeps the cloth from falling off.

Hello sir.. Thanks for a very easy recipe. I have a query, at my place the room temperature at the moment is around 40°C, peak of summers. I needed sour cream to bake a cheesecake, so is it ok to keep for 24 hrs rest at room temperature or shall i keep in fridge.

Thanks Matt. Great tip. We do not have either sour cream or buttermilk in Brazil. For Bmilk everybody says put lemon juice or vinegar in milk. However, that is merely sour milk and not real buttermilk that comes from the whey in butter manufacturing.

Thanks! Those are just suitable substitutes if you don't have the real thing. Even this sour cream is an acidic sour cream and not a true cultured sour cream, but it works great as a substitute. Just like the "Sour" milk it works as a suitable substitute. Traditionally buttermilk was the liquid left after churning butter, but now the commercially produced buttermilk is actually cultured as well.

You are welcome! 98% of the milk we get at the supermarket is pasteurized milk. In this case whole milk which is about (3.5%) milk fat along with the heavy cream which is around 34 to 36% milk fat. Raw milk is not sold very often, it can be found at specialty stores, but it is like 6 times that cost as what we would call regular milk here.

For me in summers ambient temperature goes to 37 degrees celcius, and in winters it drops to 12. So if the month is hot how long do I keep it out for and how long if it's too cold? The length of time is just a guideline, let it go until it thickens. And after it is made, it needs to be stored in the fridge.

Hi there! No sorry, I don't think you can make sour cream with non-dairy whipping cream, since part of the natural chemical process that happens, has to do with the acid in the lemon juice or vinegar and the dairy. But you can certainly try it.

@@syahirahhaizan1345 Yeah, sounds about right with non-dairy whipping cream. Also note, there are two types of sour cream, acidic and cultured. The kind sold in stores that most people think of as sour cream is cultured. Meaning they use some sort of a culture to sour it. Something like buttermilk would work well. So instead of vinegar or lemon juice you use buttermilk. If you use vinegar or lemon juice like I show in the video, you get an "acidic" sour cream. It will taste different than true cultured sour cream. But it works great as a substitute if you can't find sour cream where you live. :)

You are welcome! We don't have "cooking" cream here in the States. We have whipping cream and heavy whipping cream which are both used in cooking as well. So I imagine cooking cream will work as well. You will just have to try it and see. :)

Yep it is perfectly safe to eat. :) The acid from the lemon juice or vinegar protects it from harmful bacteria.

Hi David! If you use less lemon juice or vinegar it won't be as thick. If you use more it will get a little thicker. If you have cultured buttermilk, add 1/4 cup of that instead of vinegar or lemon juice. It will produce more of a classic cultured sour cream as opposed the to "acidic" sour cream substitute which is what I demonstrate in the video. :) Easy to experiment with at home, to see what you like the best.

My earlier statement stands, if you run out of sugar, you have to go to the store to buy it, if you want to bake, etc. lol The whole reason why people make things at home, is one, because they enjoy it and two they like to know exactly what ingredients are put it in, and three, homemade food tends to be more healthy then store bought. :)

I have heavy whipping cream powder, sour cream powder, and cream cheese powder. I've mastered the cream cheese powder but I haven't mastered the heavy whipping cream and sour cream powder. It doesn't come with enough powder for me to experiment so I try not to use them so I won't mess them up. I also have store brought whole milk in a carton but I don't know if that would work so yeah...I would have to buy the sour cream at the store.

Hello, I am not sure. We don't have all purpose cream here. We have heavy whipping cream, whipping cream, half and half, milk, etc. Although, your all purpose cream may be the same as our whipping cream. If so, then yes it should work. The best thing is to just try it and find out. :)

You are welcome! It will last 1 to 2 weeks if covered and put in the fridge. While you can freeze sour cream the texture will change quite a bit. So only freeze it if you are planning on using it in soups, casseroles or other cooked dishes like that. :)

Room temperature here in the US is usually between 70 to 80 F (21 to 26 C) depending on the climate and location. You may need to store it in the fridge while it thickens if the room temp is too hot there.
