How to make Blueberry sourdough pancakes
Sourdough Blueberry Pancakes
400g / 14oz Sourdough Starter
100g / 3½oz Plain or All purpose flour
100g / 3½oz Fresh Blueberries
60g / 2oz Milk; full or half fat
1½ Teaspoons of Baking Powder
2 Teaspoons of Sugar
½ Teaspoon Salt
1 Tablespoon Vegetable oil
1 Large Egg
knob of butter
Drizzle of Honey

Today I forgot to add the plain flour. I was getting too clever making mixes for pancakes and sourdough bread at the same time. But the wet mix shot across the cast iron pan and very quickly turned black. But it was delicious I love burnt food. I corrected the mix and got normal pancakes after that. I love how I can experiment a bit with pan temperatures and cooking time. The family like them well done, which is funny because until I started making pancakes they had never tried one before. My new moto with cooking is "Failure is an option". hehe. But it is going really well thank you so much.

John, I could listen to you all day. So calm and very thorough with your instructions. And, this recipe looks amazing!!! I just found your channel and look forward to watching many more of your instructional videos. I'm off to view your sourdough starter video next. I will certainly be trying this pancake recipe. Wow!!! I grew up in Alaska and the sourdough crock was always on the counter top. It was a one-gallon crock. We used a plate to cover it with. When we were going to make pancakes the next morning, Dad would add the ingredients to the crock that would cause the starter to grow. Flour, more water, and something else. I can’t remember (this was the early fifties): but it may have been sugar. Anyway, the next morning we had a bubbly mass; and dad poured out some (perhaps 1/3 of it into a bowl-we had a family of ten). This bowl of starter was for the pancakes. We added the ingredients to the starter that John listed. In the fall, after we picked blueberries, yes we had blueberry pancakes. When winter was coming on, before we kept the fire going all night, sometimes the sourdough would freeze. We were friends with a family that we could go to and say (somewhat humbly), “ Our sourdough froze, can we borrow starter.” And we were also glad to help them out when the same thing happened to them.

Since I made the sourdough starter and showed this video to my wife, she is demanding sourdough pancakes. I ordered cast iron pans to go with my cast iron Dutch oven to cook them in. I love having an excuse to get the kitchen tools. I am having a ball following your receipts and making bread. Thank you for my new and productive hobby

@@JohnKirkwoodProFoodHomemade Wowwww they are delicious!! I tentatively tried the first one which I made plain. I had to eat it straight away it was amazing, even without the blueberries. They are so much better than any pancake I'd had before.

Those pancakes look amazing. I’ll have to save them for my Sunday morning breakfast that we have here. Two bits of observation first of all please John use of set a tongs when you’re wiping down your pan with the oil don’t wanna burn yourself. Second of all large cast-iron pans are made about 7 hours by car north of me, though I have my grandmothers old Griswold pans, which are about 120 years old

I like butter on every pancake, and lots of it, with hot Maple Syrup. I do have to wait until it's in season as it is expensive here too.

I don't mind blue batter, so I always mix the berries in, and, Never, Never flip a pancake and then smack them several times with the spatula. That backed me up. Really I do like your recipes and I have made several of your bread recipes. They always turn out great. Especially the Crusty rolls. I've learned a lot watching you handle your dough too, especially how to handle real sticky dough. Keep up the great work. I enjoy your videos very much. Thanks.

I made these this morning as it was time to feed the starter. Definitely a thumbs up from the two of us! I didn't have any blueberries (they are hella expensive here) or maple syrup (also hella expensive), so used Golden syrup and just made them plain. Still, VERY good pancakes! I am going to try it with some bananas next week. Thanks for the idea!

Just made these. With a rye based sourdough starter it was delicious. My husband liked the texture. I did add a touch bit more sugar and omitted the honey. Otherwise spot-on perfect measurements. Thank you.

Thanks John for making this much-requested video. This is one that will get a lot of use in my home. :) I live in South Africa and also struggle to find Maple Syrup at a reasonable price. My go-to is Woolworths. It is good maple syrup, a little expensive yes, but at least it is real Maple Syrup and not flavored golden syrup.

Hi John. We just had this sourdough pancake for brunch. Turned out well although i didnt have blue berries at hand. Had it with butter n honey. This 2nd time it tasted very much like uttapam (Indian pancake made with rice). Didn't have sufficient discards n I added a little more flour n milk. If we had some curry would have been perfect. The first time i made it, the pancakes were really yummy. Thanks again for sharing. I'm still trying to perfect my sd so I'll have a lot of discards again. Take care n keep well. Gb

Tried the pancakes today with the sourdough starter. Instead of blueberries I added mangoes since I didn't hv any blueberries. I must say John that it was delicious! Thank you for the recipe and now I know what to do with my extra sourdough starter!

Wow just found this one...I’ve embarked on a sourdough journey and it kills me when they tell you to “discard” so much of your starter every time you feed it. I’m happy to learn of a new way to utilize it! But I’m not doing the blueberry...I’m using your strawberry variation! Which, by the way, is my family’s favor pancake now. Thanks John!

John, I'm cutting lectins out of my diet, so that's why I watched your videos on first making sourdough and then using it in your recipes. The yeast and lactobacilli consume the wheat gluten and other lectens in white flour and that's why I use the sourdough. My starter is up and running in the refrigerator and used it today to make your pancakes. Now I only use it to keep it fed and to make bread etc. Delicious. Best pancakes I've ever had! The bread too is nice and full and fluffy. One thing I may do is use millet or almond flour in place of the fresh flour in this recipe. Haven't gotten to the baggetts yet since the bread is so good and I'm on a diet to loose weight on a lectin reduced diet. Thank you.

Looking forward to them all. I'll have to skin and deseed the tomatoes. They tell me that's where all the lectens are. I'm trying Roma tomatoes this year in the garden along with early girl indeterminate vines. I don't know how you do things over there, but so far I'm impressed.

They look so yummy. I take it the discarded sourdough is from a weekly feeding of your starter? You may have said that and I missed that. They look similar to your crumpets only bigger. I have made a lot of scratch pancakes in my time but I have never had them come out looking quite that good. You are truly gifted. I have some cast iron but I don't dare use it on my glass cook top. I use it over the grill or camp fire. Is there any reason I couldn't use butter instead of oil in the batter or in the cook pan? I know I have to be careful not to burn the butter in the pan. I have good quality nonstick pans and most likely I would skip oiling the pan if I need a high temperature. I've been at my job as an electrician for 40+ years but my cooking skills pail next to yours. I'm thankful to have you as a teacher. Thank you John.

Thanks Maureen, it must be when you tip the dough in it reduces the heat of the dutchy, don't really know the science of it only that it works and it doesn't burn.

In Canada we have the following options; whipping cream-35%, butter milk, table cream-18%, half and half-10%, light cream-5%, homogenized-3.25%, 2% milk, 1% milk and skim milk

John, Not sure what I did wrong, if anything, on this pancake recipe. First they tasted great but I found them to be chewy and harder to cut with a fork than I would expect of a pancake. Is this normal because we are using so much sour dough in the recipe? Terry

In plain thin English pancakes, you don't use yeast at all, it's eggs, flour, milk, and salt. I suppose you could leave out the baking powder in my SD blueberry recipe, that would stop them puffing as much.

Looks great, last time I kept a starter I wound up throwing away a bunch every week and it felt so wasteful - this is a fantastic idea. PS Maple syrup is expensive here in Canada too and we make the stuff! Must be an expensive process.

I don't have any discard as I only take what I need out of the fridge and feed it the night before I start on a new loaf. So I never have lots of starter oil hand or any "leftover discard". I suppose I can just take dome out and feed it over a few days till I get the amount I need for this recipe. Am I correct? PS Maple syrup is pretty cheap here in Canada (even out west where we live).

Yes you can make up a starter if you don't have excess sd. Maple syrup is about 12 quid a bottle over here 😢.

Not bad on the pancakes. I do slightly different on the pancakes. I like to let the starter eat all the gluten and wheat from my flour. I mix buttermilk, starter and flour, and let if sit over night. Then in the morning, I add my eggs, baking soda, Oil ( I prefer avocado), sugar and salt. Then cook them up. I will have to try adding the berries next time. :-)

Thanks again Robin, gotta remember sourdough is a live culture. when it rises bread it does it slowly at around room temperature, in the pancakes the sourdough is killed off the second it hits the pan by the extreme heat hence it will never rise the pancakes, sourdough batter is only used in these for the taste, the baking powder is there to rise them and give them that cake texture. @@JohnKirkwoodProFoodHomemade Thanks, I added an extra egg to thin out the batter to make waffle, it was delicious, crispy outside, moist inside with holes. Tried other discard waffle recipe with sponge and baking soda, texture too airy. Started following your way to maintain starter, it is a lot less stress than feeding twice a day. Since my starter only 2 months old, I was under the impression I need to feed it everyday to make it stronger.

No need to add egg, baking powder or oil. It is self rising and will do great and taste great by mixing with a little plant milk and flour. Salt or sugar to taste. I like to put a little applesauce in it.
