I made some crumpets today and they are totally delicious. You are right about not overfilling the rings. I tried using a ladle to scoop in the mixture and over filled the rings. Once I had the depth right they were almost perfect. One tip I discovered today is don't fish out the spills until the end. They are delicious all black and burnt.

I've never had a crumpet and have been curious about them for years. I followed your instructions carefully, except used large heart-shaped cookie cutters, and they turned out delicious, especially for a Yank's first attempt. The whole family loved them! I'm ordering crumpet rings today! These will be on our breakfast table often. Many thanks to you for this, and all, your wonderful recipes!😊💖

I love your videos, great recipe, my only advices would be not to add the baking soda until right before you're ready to pour, otherwise the acid in the sourdough will interact during the rest/ferment and won't have much oomph left, lol, otherwise looks delicious.

Just made these for the first time and they are delicious! I got 11 in my batch. Did half plain and half with some "everything bagel" seasoning on it while cooking. House smells amazing. Thank you for the recipe and easy to follow instructions in your video.

Thanks John for the video, been looking for a decent sourdough crumpets. Will try this tom. With the overnight polish first like you did. As the last time , I tried another recipe it did not hv an overnight polish and it was very oily as well. So hoping that this time it will not be oily. I hv found a good Sourdough bagel recipe. Now on to finding a decent Crumpets recipe 😊

Thank you John these crumpets look amazing. It seems to be similar to an American "pancake" only smaller and a bit thicker. I just about spilt my tea laughing when you said you were using your "Trusty Shower Cap" to cover the poolish. All this time I thought it was a special baking bowl cover and wondered where I could get one. LMAO :) Your measurements are so precise even to the IR temperature gun you use to check the pan temp. Great idea. I have an electric range and often wonder just how hot the pan is getting. I also appreciate that you put both grams and ounces in your videos and recipes so I don't have to convert everything. I like that you use a scale - sometimes volume can be the same but have different weight like with flour. John, I was watching another starter video from another channel - and in the comments a person asked if there was anything to be done with the discards during the 7 day process of getting the starter going. One reply was to make muffins, pancakes, or crumpets with the discarded starter dough. Is there anything to this? Do you do anything with the starter discards? Another suggestion was to add it to ones compost bin. I would respect your thoughts on this. I ordered your granulated sourdough starter just about an hour ago and am anxious to get started making some of your bread recipes. Thanks again John. Your the best.

As a retired pro chef i've used scales all of my working life, the only people who have problems with measurements doing my recipes are the ones converting to cups and measuring jugs, I weigh everything including any liquids, and try to use grams instead of ounces then there is no ambiguity at all, your ounce where you live could well be slightly different than the ounce in the UK but my gram is exactly the same as your gram wherever you live, and it's a smaller unit, hence more accurate.👍😉😃 PS, I use my excess starter to make these every Sat, kzbin.info/www/bejne/kGmrqoWXd9Wkf7s

I was too impatient to wait 3 hrs for the batter to rise, so added a tsp of baking powder, replaced some of the milk with buttermilk, added a knob of butter, melted, sugar, raisins add and cinnamon and cooked pancakes. They were light and delicious! I'll be making the crumpets, too, later. Healthy eating can wait until tomorrow!

These remotely resemble blinis, without milk and eggs and melted butter in the dough. I think you could eat these with same sides as blinis; roe, sour cream (smetana) and onion. Gotta try these. Excellent....you’ve answered a question here that I’ve been trying to find for some time.....until now I’ve not been able to find the correct temperature to cook the crumpets at....my crumpets always either cook too quickly at the bottom before the top is done or don’t cook through. I’m also guilty of over filling my crumpet rings so I’ll rectify that in future. Great video, thank you.

The reason I asked was if one could prepare the crumpets say a day or two in advance and then heat them in a griddle or skillet before serving hot with other side dishes. Would they need to be refrigerated? (The avg. room temperature would be between 19 - 24 deg C) Thank you again.

I love your videos I have a question when you take your sourdough starter out of the refrigerator do you need to let the whole batch sit to room temperature or just the amount you’re going to take out to make and then again to re-feed the starter does it need to be room temperature to re-feed or can it be immediately after taking out of the refrigerator thank you so much

I've have experience a bit of negative attitude whenever I brought up the subject of a english muffin. I love them with butter and jam. They are also good to make a breakfast sandwich. I have made something very close to a Sourdough Crumpet by accident.

Hi John. Thank you for this video. If your starter is one week between feeds and in the fridge, does it rise, reach a peak then start to fall? If so does it matter when you take some out to make the poolish? Also if you cook/bake several times in the week your starter maybe running low would you do a top up mid week? I've just cooked your crumpets with reasonable success and with a few corrections I'm looking foward to going again. I have to admit to being 70+ and never having cooked with sourdough before.

Hello John! Thank you for this video. I have been trying to make crumpets for some time, and have tried different recipes, but nothing seems to work. Even with your recipe, i can’t get them to cook inside. No matter what I do with the pan temperature they’re always done or overdone on the outside and still raw inside... which also means they deflate immediately after taking them out of the rings and they don’t have the typical awesome crumpet consistency. Any clues on what I could be doing wrong?

Hey, so this problem seems to be all over bread forums when I research it, yes, it has got to that point...😂. I suffer the same issues and so do others in the end most people gave up. I don’t believe most of these KZbin recipes are really getting the inside texture right, otherwise they seem to know something that countless others can’t seem to work out. Would love to see a picture of the inside . Did you ever solve the issue?

You can freeze them before or after. They still come out delicious. If you do freeze them before make sure they are fully defrosted before baking.

Interestingly John, I saw a tv programme on sourdough bread here in Spain just yesterday, and I wondered whether this tip might help those of your viewers who are having issues getting their starter going, the bakery viewed, fermented a chopped apple and a few raisins for 24 hours in the water they use for making the starter, hence creating an added ammount of yeast bacteria to the mix, I dont know what you think of this ? Hope it might help .

Once your sourdough has started and is going strong there really is no need to feed it anything but flour, adding more sugar in the form of fruit will only force the sourdough to work too quickly when you should slowing it down.

These look delicious! What if you don't have rings. Are there alternatives? Can you shape aluminum foil into rings?

I am doing this pretty soon I've gong to have to be creative for all the rings.I do have a lot of choices more than I thought.. Loving this John thanks for your time. I looked one your playlist I was trying to find a bread recipe with the autolyse method I've had no luck either my dough in the morning doesn't come to temp in 30 min. I live in FL why not...lol or the next day I don't know when to put it in the oven, how many stretch and folds......... I'm just not getting the timing right.. so frustrating. If you can help or direct me where I could find the dummies version and Thank you again John

Hi John Sorry! It is me again. I made the sourdough as instructed. Bubbles, smell all going well. I transported the sourdough into a vessel in the door of the fridge. Great! But now there is a liquid on the top of the sourdough. What do I do? Mix it all together or pour out the liquid? I want to make crumpets.... desperately! Thanks for your help and advice.

It's fine Marina, the liquid is called the liqueur, you can mix it in or pour it off when you feed the starter, try to use a little less water next time you feed, but it is normal to see this grey water on top. Mr. Kirkwood - Recently I've been making crumpets at home, though I've never had one in the UK to compare results. Should the baking soda add any taste to the dough? If you are familiar with German soft pretzel dough (Laugenbrot) I notice the baking soda in my crumpets imparts a taste similar to Laugenbrot. Is it normal for crumpets in the UK to have that taste or should I cut back on the amount of baking soda being used? I've been using a mature pre-ferment yeast starter rather than a wild sourdough starter. I've been making my crumpets on a cast iron griddle pan having essentially no sides. It is easier to flip things without sides to get in the way.
