My father in law was Coast Guard radar man on Albatross aircraft in Kodiak. Also worked in Boston, Carolinas, Corpus Christi. Old smoky grills are simple. I like the no gadget method.

I really need a rundown of you explaining how you set up the coals what type of coals and wood do you use and also what thermometer are you using?

Sorry I took so long answering back. The type of calls I used at that particular cook were Royal oak. I had set them up in a pile and put a couple of the tumbleweeds to light it. As far as the type of wood I used, it was Apple wood chunks. And I did a modification to the old smokey where I used a pizza pan as a deflector so that I could get indirect cooking. It turned out really well. If you have any more questions let me know. Again sorry for not getting back to you sooner.

Also is it just a regular pizza pan I can get to Walmart did you just place it on under the grill grate then place grill grate on top?!

I bought a 20 inch pizza pan. Drilled about 2 inches below the screws for the grill. Used the same type of bolts and nuts for the grill. Then place the pizza pan on that new set of bolts. I have cooked a 20 lb brisket on that old smokey with that modification and it came out perfect!
