We had family over last night for dinner. I made your squash casserole and the pan was empty afterwards. I made this but added a can of cream of mushroom to the milk and egg and OMG it was delicious. I combined yellow squash and zucchini and plenty of cheddar cheese ! thank you !

This is good with a mix of zucchini & yellow squash, too. Ms. Brenda didn't show it, but you need to drain the cooked squash really well before adding the other ingredients. (She did it off-screen)

Brenda, this is the best thing I ever put in my mouth. I cooked it a couple of weeks ago and something happened with a change in dinner plans for that night and I ended up covering with foil and putting it in the freezer. Well, we had it for dinner tonight with butter beans, rice, sweet potatoes and chicken. WOW, was it a hit with everyone. I am not exaggerating . This is going to be a regular staple for the freezer. Dear Brenda,' My husband and I are cooking your squash dish today. We divide it up into small oven safe dishes and cook it as we want. I think the powdered onion that you have in yours really makes it great. We will make enough for 12 or so meals to put by. I have a long term illness and because of that, I am limited in the different foods that I am able to ear. Your squash dish served with plain white rice is one of them. Hi Ms. Brenda! This recipe is so close to how my aunt made her squash casserole, except that she mixed the melted butter with the cracker crumbs and then added the shredded cheddar in a small bowl, coating it all, before she combined 1/2 the mixture with the vegetables and the other 1/2 for the topping. I love your idea of coating the bottom of the pan with the cracker mixture too! Which kind of cheddar do you prefer for your squash casserole? I usually make mine with sharp cheddar cheese.
