Stilton is an English-style #bluecheese. It is white-cream to amber in color, interspersed with veins of blue mold. It has a hard, rough, wrinkled skin, formed by the action of various molds.
#Stilton #cheese is a species protected by European Union law; the name is reserved only for species produced according to a strict recipe in Derbyshire, Leicestershire and Nottinghamshire.
For production I used:
10l of whole cow's milk, pasteurized at 65 * C / 30 minutes
2ml of calcium chloride
1g of mesophilic MSE cultures (serowar.pl)
1g of penicillum roqueforti mold cultures (serowar.pl)
2ml calf rennet "carlina" (wańczykówka.pl)
30g of non-iodized salt
non-chlorinated water to dilute the chloride and rennet
