Thank you both - I’ve never heard of nettle cake. Totally going to try it this week while the nettles are still young and lush. I also love your way of baking - you’re so relaxed about measuring and not getting flustered; it reminds me of the way my granny used to bake ( in the nicest possible way!). The happy baby gurgling away in the background made me smile like crazy. You’re both such an inspiration, thank you.

right, am off to get my nettles to make some yummy nettle cake.cannot wait to make it!..........mother natures recipes are never boring - she has provided us with everything we could ever need - thankyou gaia/sophia (mother earth)...........we are blessed to have channels such as yours..........much love and light to you and your awesome family and all who appreciate this channel..........also instead of sugar i made some date paste an an equivalent to sugar.......i cant waste the juice - i will drink that, more nutricious than spinach water

Oooo.. I'm a gluten free, oil free and refined sugar free vegan. I am going to have to tweak the recipe and see what I can come up with. I'm thinking flax egg, applesauce, monkfruit and oat flour.🤔 Can't wait to hunt up some nettles so I can try it! 💜

I would tip the water in which the nettles were boiled in to a bowl, let it cool, then use to water some plants, the goodness in the water will help them grow.

Iv read many contradicting things over the years there seems to be no true answer to me. I personally just chose nettles not flowering just to be sure. It's somthing iv read into and still can't find a true fact.

Personally I'd squeeze any excess water out of both the nettles and courgettes. That will make the ingredients less wet. Also based on your egg quantity, a friend once gave me a recipe which was 4oz of everything, flour, sugar, butter and 4 eggs. This is for a basic sponge mix.

I've always done, half the number of eggs to the oz of other ingredients. So for 4oz of flour etc I would use 2 eggs. The cake will be a lot lighter.

It adds slight nettle flavour plus nettle contains many healthy benefits & has 4 times the calcium than broccoli oli or spinach!
