Being in the USA, I had to lookup golden syrup, as it isn’t a common product one can buy here - nor is caster sugar, but I did know what it was. Thank you for sharing the recipe.

I have a feeling you wouldn't get this honeycomb structure using xylitol and coconut sugar agave or maple Syrup......? As I unfortunately amongst many others I could imagine, aren't able to consume refined sugars (yeh I know sugar is sugar, right...but alternatives don't make my body hurt like the white sickly stuff)

This looks divine! Almost like that spongee toffee you can buy. We havent cut our grass yet and Im working on ising the first fruits of dandelions. 😅 The grass is getting long plus lots of rain. Can I use honey in place or would it give a different flavour?

No castner sugar is not same as regular sugar.

Caster sugar is finer that regular granulated sugar, it dissolves more easily than regular sugar.

Just add a drop or 2 of molasses to the corn syrup for the sub for golden syrup. Or even maple syrup.
