Hello everyone:)
This week’s video is about stollen pound cake.
Last time I posted a delicious stollen bread recipe,
But t takes a lot of time and effort to make stollen bread.
So I also made a simpler pound cake version.
It has a similar flavor to stollen, but has a moist cake texture.
I think it’s a cake that everyone can enjoy!

▶Ingredients (width*length*height 15.5*7.5*6.5cm for 1 mold)
[Pound cake]
- 80g unsalted butter
- 65g granulated sugar
- 8g honey
- 55g egg (1 per special egg)
- 20g yolk (about 1 special egg)
- 75g cake flour:
* Take 5g of flour and mix it with dried fruit in advance.
- 25g almond flour
- 2g baking powder
-1g salt

- 20g heavy cream
- 1g spice mix (If you don’t have any, you can omit it. It’s delicious even without it)

- 30g dark rum (gold or white rum can be used)
1) Lightly beat butter at room temperature.
2) Add sugar, honey, and salt and whip until the color becomes brighter and the volume increases by about 1.5 times.
3) Whip room-temperature eggs and egg yolks in several batches to make the batter well-emulsified like cream.
4) Add the sifted cake flour, almond flour, baking powder, and spices and mix lightly with a spatula.
5) Add room temperature heavy cream and mix until smooth.
6) Add dried fruit mixed with flour and mix.
7) Fill the mold with 2/3 of the batter, add the marzipan, and cover with the remaining batter.
9) Bake in a preheated oven at 160 degrees Celcius for about 40 minutes.
* Baking time and temperature may vary depending on oven performance.
* To check if it is fully baked, check the crack in the center and take it out when it feels dry.
10) Take the baked pound out of the mold while it is hot, apply rum all over it, and let it cool completely on a cooling rack.
[Marzipan]
-44g almond flour
-33g powdered sugar
-9g egg white
-1g almond extract: If you don’t have it, omit it.
-A pinch of salt
1) Mix all ingredients, knead into one lump, and shape into a cylinder.
* Once it is completely cooled, wrap it in plastic wrap and leave it for at least a day to make it more moist and all the flavors blend well, making it more delicious.
* Storage: After sealing, it can be stored in a cool place up to a week. If you want to keep it for a long time, slice it into pieces, wrap them individually, and store them in the freezer.
