Hi guys.
This recipe is my go-to granola recipe that is really delicious.
Last year, the restaurant where I worked as an intern in New York was 'Eleven Madison Park', the world's only vegan restaurant with 3 Michelin stars, which was also voted #1 in the world for 2017.
This granola was given to all the guests at the restaurant after eating as a gift.
As I was the newest member of the pastry team, I made over 7kg of granola every morning and I remember it was so so hard.
But now that I think about it, it was a valuable experience.
And best of all, I got a granola recipe I'll take with me for the rest of my life! lol
(In case you're worried... the key points are the same, but I've changed the recipe slightly to make it more suitable for home-made)
While making granola at the EMP restaurant every morning, I thought that someday I would share this delicious granola with you, so now I am uploading a recipe video :)

▶Ingredients (About 1 pan (36cm*28cm))
[Dry Ingredients]
150g Old Fashioned rolled oats
70g raw pecans
50g Sliced Almonds
25g Unsweetened Coconut Flakes
30g Raisins
30g Golden raisins
[syrup]
60g Maple syrup
45g Light Brown sugar
50g Olive oil
2g Ground Ceylon Cinnamon
3g Salt
1) Put the syrup ingredients in a pot and boil it once to dissolve the sugar and salt.
2) Pour over dry ingredients and mix well.
3) Spread out on a pan lined with parchment paper or Teflon sheet and bake at 130 degrees Celsius for a total of 40 minutes.
- At this time, take it out every 15 minutes and mix well.
- For dried fruits, put them in 5 minutes before the end and bake them with a feeling of lightly drying the outside.
* Storage: about 3 weeks at room temperature. You can keep it for a much longer time if you freeze it.
