Ingredients
For the Stuffed Fish Rolls:
200g fillets of white fish (such as sole, tilapia, or cod)
50g spinach leaves (blanched and chopped)
1/2 cup breadcrumbs (preferably whole wheat/ optional)
1/4 cup grated Parmesan cheese (optional)
20g red onions (finely chopped)
1 tablespoon fresh parsley (chopped)
Salt and pepper (to taste)
6 tablespoon Olive oil (for brushing)
30g carrot
50g cabbage
1/2 tbsp paprika
2 tbsp turmeric powder
20g dill leaves
For the Lemon Butter Sauce:
50g unsalted butter
1/4 cup fresh lemon juice (about 2 lemons)
1 teaspoon lemon zest(optional)
1 tablespoon fresh dill (chopped)
Salt and pepper (to taste)
10g capers
Method
Step 1: Prepare the Filling
Sauté the Onions and vegetables: Heat a small pan over medium heat with a drizzle of olive oil. Add the chopped onions and, sautéing until they become translucent and fragrant, about 3-4 minutes. Combine the Filling Ingredients: In a mixing bowl, combine the sautéed onions and vegetables, blanched spinach, breadcrumbs, Parmesan cheese, parsley, salt, and pepper. Mix everything together until well combined. This mixture should be moist enough to hold together but not too wet.
Step 2: Assemble the Fish Rolls
Prepare the Fish Fillets: Lay the fish fillets flat on a clean surface. If the fillets are thick, you can gently pound them to a uniform thickness of about 1/4 inch to ensure even cooking.
Stuff the Fish: Place a generous spoonful of the paprika, turmeric powder, and dill leaves mixture onto the fillet. Carefully roll up each fillet, starting from the narrower end, to enclose the filling.
Secure each roll with a toothpick.
Brush with Olive Oil: Lightly brush each fish roll with olive oil to help it brown during cooking. Season the outside with a bit more salt and pepper.
Step 3: Cook the Fish Rolls
Preheat the Oven: Preheat your oven to 375°F (190°C).
Bake the Fish Rolls: Place the stuffed fish rolls on a baking sheet lined with parchment paper or a lightly greased baking dish. Bake in the preheated oven for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
Step 4: Prepare the Lemon Butter Sauce
Melt the Butter: In a small saucepan, melt the butter over medium heat until it begins to foam.
Add Lemon and Dill: Stir in the fresh lemon juice, lemon zest, and chopped dill. Season with salt and pepper to taste. If using, add capers to the sauce for an extra burst of flavor.
Simmer and Thicken: Allow the sauce to simmer for 2-3 minutes, stirring occasionally, until it slightly thickens and all the flavors meld together.
Step 5: Serve the Dish
Plate the Fish Rolls: Once the fish rolls are baked to perfection, remove the toothpicks and place them on a serving plate.
Drizzle with Sauce: Generously spoon the lemon butter sauce over the fish rolls, ensuring each roll is coated with a rich, flavorful sauce.
