Why do we like Yuya-san so much? Part of the reason is that he's just like us. Not "Just like us" in the way that celebrities and Hollywood stars claim to be (because we're from Earth, and celebrities and Hollywood stars are from Neptune), but actually just like us. "I don't need these kind of great things all the time," he says, but we all know that spending that much money for only 1 pound of beef is something that he probably only does for the New Year, his birthday, and maybe one or two other holidays. And because he shops like that, he's not going to waste it, so we know the way he cooks it will be good, but will also be something that we can do ourselves without spending a lot of money on fancy ingredients or needing to go to culinary school or whatever. Also, when the chopsticks don't work for adding things to the pan, he just uses his hands, same as we do (it's going to be cooked anyway, so what does it matter?). That's our Yuya. _Ichiban!_ (Also, I think "friend of cabbage" is one of my favorite things to say now)

1:37 The name, see-you-tomorrow, comes from the truth that if you do not chew Enoki properly, it will hardly digest. Then, you will see it again the next day, lol. By the way, a more formal name of Enoki in Chines is 金针菇 (Golden-needle mushroom).

Did you know enoki mushrooms look completely different in the wild. When they farm them they grow them way to close together so that they compete for light and get tall and thin. Normally they grow to have caps with a diameter of a few inches.

Shungiku is called chrysanthemum. The flower is generally used as decoration, and until today I had no clue it was edible. It's nice to learn something new.

It's also called crown daisy or edible chrysanthemum, kikuna, tong hao in Chinese. I'm not sure if it's a special variety of chrysanthemum or if all varieties of chrysanthemum are edible.

I have actually been curious about Japanese cuisine. The most I have ever been exposed to in the United States is the stereotypical items like ramen, sushi, and udon. But, I honestly don't know much about the actual details of what is a common Japanese dish. Also, I live in an area where there are not many authentic Japanese restaurants to explore those options. Most Japanese style restaurants in my area are actually run by Chinese people.

So I decided to check out one of Chef Nipponess's cooking videos after we watched his Uncle Roger commentaries. What do I find Sukiyaki (YAYYYY for me and my family too) since Sukiyaki and I have a long romance together! Though I had been treated to some minor tastes of Japan because of my buddy's Mom who came from Tokyo I had never had a full meal of Japanese dishes. On November 14th 1979 I turned 13 years old & Sukiyaki was the first completely authentic Japanese dish I ever tried. Our sweet & lovely Japanese waitress recommended it to me & it totally stole my heart (or was that her). When she overheard that it was my 13th birthday she went in the kitchen and brought a beautiful small cake out later to wish me well. Sukiyaki is a meal unto itself & is still one of the best things I have ever eaten in my life. Sadly no Japanese restaurant that I can find in North East Ohio (including Otani's where I worked at years ago) serves it, so this recipe is pure gold to us!

Fun fact! Shirataki noodles usually have 0 calories (or very little calories. Like 10 calories a pack little) So they can be a good substitute for people who like pasta or other noodles, but are trying to avoid them to lose weight. Texture is different from wheat based noodles of course, so it's not a 100% perfect sub, but an option worth trying I would say.

Another fantastic dish! One piece of advice id like to offer though is when scraping ingredients from your chopping board use the blunt side if the knife blade not the sharp side, it will increase the the life span of your knife

"Shitake mushrooms" always reminds me of a routine off a comedy show called the Katherine Tate Show, about two people who are very unadventurous eaters. Shungiku is edible chrysanthemum greens in English. Shungiku is also much easier to say and spell than chrysanthemum by a long shot 😉 The Chinese make a lovely herbal tea out of dried Shungiku flowers.
