For a berry fool with intense fruitiness and rich body, we used gelatin to thicken our fruit and combined whipped cream with sour cream for just the right touch of richness with a tangy undertone.

To all the haters who say “just eat the berries with some cream” you appear to be missing the entire point of preparing food. There is so much more to the enjoyment of food beyond the simple consumption of the individual ingredients. Beautiful presentation alone can increase the enjoyment of a dish, add to that the enjoyment from having food prepared in new or interesting ways, and the new flavors and textures that arise when we mix different ingredients together. No one is suggesting that this is the _only_ or the _proper_ way to enjoy berries and whipped cream! Rather, this is showing a way to transform an already delicious set of ingredients into a truly memorable dish.

If you use the plastic blade that came with your food processor (you know, the one you never use) it will smoosh up the berries without grinding the seeds. That makes it much easier to strain them out and there won't be any fine particles slipping through the seive.

Much love to my Grammie for introducing me to the test kitchen magazines (back in the day) she kept them all, what I wouldn’t do to have her collection, sadly prob got “junked” she would have loved KZbin! Thanx for another great recipe & a warm memory 🫶

You can save the seeds and pulp and use them in muffins or other baked goods.

These were yummy and pretty! I halved the recipe but found that I still needed to use the 2 tesp of gelatin powder instead of 1 tesp. The puree/gelatin mix sat in the fridge overnight with no problem. I used only strawberries and skipped the sieving. I couldn't find Carr's whole wheat crackers so I used Lotus Biscoff instead. I'm sure Walker's shortbread would work as well. Thanks for the recipe!

Take it to the next level and make it a ‘Eton Mess’ by breaking up meringues into the layers! We also sometimes add chopped marshmallow or make it with yoghurt instead of cream and top with grated chocolate! Yum

I watched your program, Julia.. everything looked delicious! I especially liked the turkey meatballs not to mention the fruit dessert! Very good.. very good!

Thanks Julia it's so nice to see you someone who knows to scrape out the bowl or the container with a rubber scraper. With the home ec classes being canceled for the last fifteen years or so it's just so frustrating to watch people use a liquid measuring cup for dry ingredients and a metal measuring cup for wet ingredients. Very frustrating. But I assume Fairport schools taught you well even before you got to culinary school. I was trying to see if it was Wegmans heavy cream 😊.

Normally I love recipes on ATK, but there is no way I’m doing all this work when fresh berries in vanilla ice cream or on shortcake with whipped cream tastes so great!

You could totally reduce the juice you strained out, and mix it back in. And you could also probably use graham crackers instead if you don't have or want to use the crackers they recommend.

Since they're a test kitchen, they may have tried that and found it wasn't as successful as just using the puree. (Although I'd probably try reducing the juice and then adding a small corn starch slurry to ensure it's not too runny.) But I'm 100% with you on the graham crackers. I think Maria's cookies would also make a good substitute that's even cheaper than graham crackers. I've tried Carr's whole wheat crackers and they're ok but pricey. I wonder how Wheat Thins would be as a substitute since they're also wheat crackers that have a bit of sweetness to them?

I use stevia and monkfruit mix and usually use about half the amount suggested. I make "jam" that way with gelatin. It is a form of freezer jam.

Whenever I strain something like this I use a ladle to evenly push the food through the mesh by using a gentle stirring motion.

Yeah, that's $12 just for the fresh berries (based on pricing at my local Walmart in Florida). But if you're having company, it might be worth the splurge.

Strain the fruit directly into your saucepan to reduce cleanup and fruit loss.

True, but the point of straining it into a measuring cup is because the recipe calls for 2-1/2 cups. If you strain it directly into the saucepan and you end up with more or less than 2-1/2 cups, it could ruin the recipe.

Items for the sous chef to wash: 1/4 size baking sheet, paring knife, food processor bowl, food processor blade, food processor lid, two fine mesh strainers, 4-cup liquid measuring cup, three rubber spatulas, 1/2 cup measuring cup, small bowl, mini bowl, whisk, small saucepan, four medium bowls, chef knife, cutting board, tablespoon, standing mixer bowl, standing mixer whisk, 1/4 cup measuring cup, 1/2 teaspoon, 1/3 cup measuring cup, 2 spoons, 6 parfait glasses, 6 serving spoons.

I’m vegan, and I plan to try making using whipped aquafaba instead of whipped cream, and agar instead of gelatin.

@@sandrah7512 I agree that whipped aquafaba is more like egg white meringue, than whipped cream, but with sugar and vanilla I think the aquafaba goes well with berries. I’ve never personally tried to whip coconut cream, but that should work well, although some people strongly dislike the taste of coconut.

Who ever thought that it was a cute name.....IT'S NOT! "Fools" is such a tacky name for a dessert! (instead of heating up cream with egg, they whipped cream with gelatin) So why don't they just call it a "Gelatin Berry Parfait" ¯\_(ツ)_/¯

The term fool or foole is over 400 years old so I think it's sticking around. It was once synonymous with trifle, another silly name for a yummy dessert.
