I can't wait to make these, I love sundried tomatoes!! I often use them in scrambled eggs, along with mushrooms, peppers and red onions, delicious!!!

Great video but you did not get into storage. I assume they have to be kept in refrigerator, but for how many days or weeks?

Hello! There is much debate on this. I have made these for years and keep them sealed in my pantry. I make roughly 1/2 dozen jars, and we are usually out by March. I have never had any of my jars go bad.

I'm in Zone 5b central Nova Scotia :-) Yes I was researching on this for 4 hours - and is a lot of recent controversy on the safety of storing homemade sundried or dehydrated tomatoes. (we don't add Sulphites or silicone dioxide). Even Purposeful Pantry only commits to a few days in fridge! Oregon Cottage has done sun dried for MANY YEARS no problems - and was put off by the new found warnings, so she did great research. She learned years ago from a old pro to dip each piece in red wine vinegar to add to acidity before putting in oil, and only add DRY herbs (like you) not fresh like we do dill pickles. I'm going to try the red wine vinegar dipping then store in fridge, and then use the used vinegar to make my pickled beets and onions 🙂

@@simplyfinancials that sounds very interesting. Maybe use a bowl and strainer to do a bunch at a time. I also dry mine out pretty good, I wonder if that also has something to with being safe. I think in the end, it comes down to what you are comfortable with. I think I saw someone put theirs in the freezer, but I would hate for them to crack. 🤔

How do you use it? That is alot of oil, so just a spoon full in recipes??? And storing it in cabinet or frig? For how long? Sorry this is totally new to me.

Hello! I leave mine in the cabinet, even after opening. Once opened, they don't last long. Once the tomatoes are gone, I usually ditch the left over oil and spices. If I was making salad dressing and knew I would be using the tomatoes, I will use some of the oil. Likewise, if I'm making pasta and will be adding them to my pasta, I will use some of the oil to sauté veggies. For pizza, I scoop out tomatoes, spices and there is always oil on them. Yum! Keep in mind the tomatoes need to always be covered by the oil.

Please store the sun-dried tomatoes in the fridge ... the oil is really precious because it is seasoned so nicely. I use it for tomato sauce, ratatouille, on top of a homemade pizza etc. 🍕

I unfortunately don't have a de-hydrator, that's why I have to buy these tomatoes every time rather expensively ... They are incredibly delicious on a slice of bread with cream cheese and Italian herbs ... 🤤 🤤

Hello! Does your oven have the dehydrator feature? Or maybe it's capable of turning on to 125-135. I've never tried this, but I also just noticed that my air fryer has that feature 🙃 not sure how that works, lol.
