I really love this. I have been making sushi rice at home for a while and my issue is that I overdo mixing the sharizu with the rice and it becomes too sticky. Thank you for sharing your expertise with us!

In my restaurant we still use a fan to cooldown the rice before we add the vinegar (so it is not too hot), what made you change to this method? Thanks for your vide!

there are recipes online. mix of 2 vinegars salt and sugar i believe

Hi may i ask u for your sushi vinegar recipe ? what ratio of salt , sugar and vinegar u use

Konnichiwa! Thank you for your comment. :) When Chef Tetsu makes Sushi rice, he uses 30 to 50 milliliters of vinegar for every 350 grams of white rice. No salt or sugar, white rice and vinegar are the main ingredients. Thanks for your support for us!

Dear Chef Chillies Sorry for the late reply. Firstly, Chef Tetsu uses a blend of two types of rice for the best flavor. Also, the Sushi vinegar is blended with a secret recipe, and the balance of the two is what determines the taste. Of course, you can add salt or sugar to adjust the flavor. 🍣 Using less seasoning may be the spirit of the Japanese, as well!! :)
