Pad Krapow or Spicy Thai Holy Basil Chicken / Porc is a local favourite in Thailand. It's served everywhere in the country and can be eaten as a meal or a snack. I got this original recipe from the famous Krapao for Hot Spicy Lovers restaurant in Chiang Mai.
The real Pad Gra Prow Gai (Chicken) or Porc (Moo) uses Holy Basil (Krapao) instead of Thai Basil (Bai Horapha). In the video we’ll explore how these two are "same same but different."
Often served with a crisp-edged fried egg (Khai Dao) on soft jasmine rice, this dish has every flavour and texture profile you can think of. It's fast to make and a true pleasure to cook.

In fact, stir-fried basil is traditionally made. Thai people only use chili, garlic, meat, basil leaves and seasonings. We will not put other vegetables. But in recent years, shops have brought in more vegetables to look at in order to reduce the amount of meat they have to put in order to save costs. But anyway, you made this video very well, thank you.

I have just watched a dozen videos for this recipe and this is an amazing production - A lot of love and hard work went into making this. No brainer to subscribe! In fact my nostrils actually twitched because I suddenly caught a whiff of hot fish sauce, garlic and chillies.... Absolutely amazing video - brilliant!

I would suggest leaving out the long beans and red onions (shallots are fine) because this dish really is all about the fragrance of "Holy basil" which is different from sweet basil and Italian basil. If you can find the Holy Basil you will see a huge difference. As a thai living in Florida, I really miss the fresh Thai holy basil.

You could grow some from seeds. They have them on Lazada. Would grow nicely under the Florida sun!

Yes, No onions put in this menu. Original hasn't long bean in this menu, but seem people need more vegetable so some people add other vegetable such as long bean. It's ok because long bean no any taste (not change the taste / vapor of Pad krapraw)

I have a Thai street food stall and this is a good recipe, almost identical to our signature version. We crank up the seasoning making our ‘black gold’ mixture which brings turbo levels of umami to the dish but basically the same traditional seasonings with a few tweaks. One tip is that if the real holy basil isn’t available in your country, you can use 2/3 Italian basil + 1/3 Thai sweet basil makes a good enough substitute.

In my opinion the Holy Basil can not be substituted. If it’s substituted than don’t call the dish Pad Kaprao anymore. Than say Chicken Basil StirFry or maybe Pad Horapah

Originally, stir-fried basil without onions and long beans. The ingredients are red chili peppers, garlic, basil leaves, desired meat, fish sauce, MSG, oyster sauce, white soy sauce.

Hey! I’m glad it looks delicious. Although there is no real substitute for fish sauce it is essentially used as to bring salt/umami to the dish. You could perhaps replace it with more light soy sauce. If the sound of fish sauce puts you off, I get it, just try it anyway. You won’t smell the fishiness in the final product. Soon enough you’ll come to love it. Let me know how it goes! :)

I’m trying to grow holy basil and it not an easy plant to get started. The seeds take a long time to germinate and it’s a slow grower.

I've seen this made with white onion and white pepper. Not sure if the taste is much different

The thai shallot is much more common than white onions in Thailand. The later are often considered rather cheap and crude. Nevertheless, these two ingredients would no doubt work well in this dish. As I mentioned, there are countless variations. I rather stick to the classic which doesn’t make use of too much veg. :)

You're right many of Thais saying Pad Kra Pao should be national dish but we also have running joke saying whoever put Chinese long bean in Pat kra pao deserves death penalty like put pineapple on pizza joke. btw your Pat kra pao is authentic anyway, it's just many of Thais don't like Chinese long bean in Pat kra pao (but we love Chinese long bean in other dish tho) despite many of restaurants use Chinese long bean in recipe.

Hey yeah! You're right. I've found so many variations of this dish. The original recipe doesn't use veg or onions. But like I said in the video I tried copying what they served me at ร้านกะเพราสำหรับคนชอบกินเผ็ด. It was the bomb! So I hope you don't give me the death penalty. ;) PS: As a native Canadian, I defend our national pizza invention with pineapples 😅 (Although I never eat it) "Live and let live"

Indians have aesthetic values related to holy basil which is why it cannot be used in nonveg dishes... .can you tell an alternative to this

Hey! That's super interesting. You can alternate the meat with chopped shitake mushrooms or tofu, or a mix of both. Skip the fish sauce and voilà: Pad Ga Prao Vegie ;)

I am Thai but cannot eat such a hot and spicy dish as you made in the clip. For me, 2 or 3 chilies in a dish (little spicy or เผ็ดน้อย) are enough.

Absolutely agree - let's forget the notion that "Pad Thai" is the national dish of Thailand. Sure, it has a history, but in my opinion, Pad Thai is just plain boring. If I want something similar, I go for Pad Mee Korat, the spicier and more flavorful "brother" of Pad Thai. For me, Pad Kaprao is the true "national Thai dish," and I always say, "you can Kaprao anything." From seafood to pork, beef, meatballs, tofu, veggies, moo yor - whatever. Just Kaprao it, top it with a "Kai Dow" (sunny side up egg), and it will be delicious. By the way - it's Pad Kaprao, not Pad Kra Pao. Otherwise, you might end up ordering a "fried bag"! (But I get it, even Thai people sometimes pronounce and write it differently.) To avoid any misunderstandings, I drop the "R" like the "lazy-tongued" Thais and say "Pad Kapau." 😉

Yes indeed Grapao would be closer to the Thai pronunciation but further from being SEO friendly! I chose the latter 😅 Thanks for the tip, I’ll have to try making Pad Mee Korat! Perhaps if it has an interesting backstory it could make a good video…

Try it out. You do what you like! It may offend some purists as you can see in this very comment section, but cuisine is not a static trade. If you do it with mushrooms try to get tougher meaty ones.

ผัดกระเพราไม่ควรใส่หอมแดงค่ะ ผิดสูตร หอมแดงโดนความร้อนจะไม่หวานเหมือนหอมใหญ่ มันจะยิ่งฉุนและทำให้ความหอมของใบกระเพราลดลงค่ะ
