I cooked this Sept 19,2019. I forgot to buy palm sugar so subbed brown sugar. My asian grocery didnt offer soybean paste so I purchased miso which is fermented soybeans and salt. I didn't get the same color as shown but the taste was pretty good. Somewhat of a unique sauce that I enjoyed (glad I got to use my tararind paste that's been hiding in my refrigerator for months.

-Used maple syrup instead of sugar and palm sugar -used miso instead of tao jio -no tamarind used lemon juice and oyster sauce -added ginger, garlic and chilli while stir frying like u do in most of ur videos -added shredded cabbage instead of bean sprouts -used chicken -added some veggies I had in my fridge (peppers, mushroom, onions) -didn’t cook the eggs enough before adding through so it ended up more dissipated than scrambled but WAS SOOO GOOD THANK U

Finally!!!!! I have been trying to find the pad Thai that we fell in love with at our favorite restaurant that had closed. Had no idea it was Korat. Every pad Thai was flavorless compared to what we liked- including Marion’s meal kit (it was fine, just not what we have been looking for). This is as close has we have ever come. Omg was it tasty. Left off the chili’s, used miso and added ground peanuts. I am soooooo happy now. Now the quest for Tom yum gha continues.

Pad Thai is one of my absolute favorite Asian dishes. This seems like it would taste a lot like Pad Thai due to many similar ingredients (palm sugar, tamarind, chili flakes), but it looks like it would be easier to prepare. Thank you for sharing this recipe; I will definitely try it soon!

Made this last night! Was unable to find the palm sugar- tried substituting brown for palm as others have suggested and had the issue that it burned quicly. Switched to white and worked much better. The sugar did seize up and re-crystallized when I added shallots/garlic and then kept it on heat and it melted again. Someone had mentioned it was too sour, I actually found myself adding an additional tbsp of tamarind. Used chili flake- started with 1/2 tsp but ended up adding the full tsp as per the recipe.I am not a big spicy person but this was just spicy enough for me. Overall found it very reminescent of pad thai- and in the future may cut a little more sugar along with making more sauce.

Lovely. I love these thin rice noodles which we call “bee hoon”, literally meaning rice flour noodles. Interesting that fermented soybean paste is used - it’s a very common condiment used by southern Chinese. We call it “taucheo” which means bean (tau) sauce (Cheo) in our family dialect. Again, instead of spring onions, I am partial to using koochye or garlic chives. The flavour of the koochye will complement it very well I think. Interesting that so many Thai names of cooking ingredients have obvious Teochew dialect roots - koochye, kailan, taucheo, peh kwai (ginkgo nuts), kek hway (chrysanthemum).

Taujiau or tauchoo is simply salted semi fermented sticky soy beans. Miso is ok for a replacement but having the beans in full form although split into half, makes a lot of difference. We love to use this in our noodles and fried rice dishes. They are the Life of any savoury dish!

Marion, THANK YOU SOOO MUCH for this recipe. ❤️ I’ve been missing Thai food a lot and haven’t been eating out because of the pandemic. Made this the other night and I literally closed my eyes in joy because the flavor was spot on and so yummy. Couldn’t stop eating it 😂

I made this and it turned out awesome! I did not have soybean paste but it didn't matter! Thanks for sharing this. Your white shirt made me nervous but you managed to keep it spotless till the end! Good job!
