Oh, Rachel! Wish you could smell my house right now. Yum! Used your recipe to make a huge pot of chili to take to church on Sunday. After worship services the congregation will find 10 pots of chili made by different cooks lined up in the fellowship hall for a sumptuous repast. You put the magic ingredient into your chili that few Home or Professional Chefs understand. The key ingredient in cooking anything is LOVE. Every preparation step that you take you express you love of the ingredient and it's importance or you wouldn't put it in the chili. I usually can't watch more that the first 5 minutes of a food preparation because the missing ingredient. You can tell from part to finish that you love every second of the preparation. I would love to sit down at a table and share your mouth watering chili with you. Your excitement is marvelous...thank you.

YOU ARE 100% CORRECT! I have said that all along. You can have the exact same recipe prepared by 2 different people, and you will have 2 different results. If there is no love and care put into cooking something, it's not worth eating. You can always taste the passion!

Rachel every recipe I make of yours is 5 star and this chile was 10 star if that is allowed. Your combination of spices and flavors are spot on every time. I just love watching you and Ron is a very lucky man, as you are also, the way he films and supports your cooking. You are also very lucky to be able to get out of this hot State when you do and go back to Ohio during our grueling summers, that never end, and I can say this because I am also from Texas, a suburb of Houston.... I keep saying Food Network should should snatch you up, but part of me wants you to just stay where you are. Keep on cooking, Rachel and I will definitely keep on watching.

Rachel, I have a dish that you can make with leftover chilli !! It’s easy and wonderful ! Put a tortilla on a large plate , then ladle hot chilli , then grated cheese (I use Velveta) , then corasely chopped lettuce. Repeat with tortilla , chilli , cheese , and liberal amount of chopped lettuce !!! I would save the leftover chilli for a special dinner for my husband and I for a special weekend treat , when the kids were at their friends house. It’s a little like a taco salad but sooo much better. Use a fork. Let me know if your Ron likes it. EASY !!

Or are you questioning cornbread baked in a loaf pan (the standard in America is 8.5" x 4.5" x 2.5") being referred to as a "loaf"? Cornbread (or banana nut bread, zucchini bread, etc. which are all referred to as quick bread(s) since they do not require a leavening agent such as yeast or to be kneaded to express the gluten) when baked in a loaf pan (or in a mini loaf pan) is commonly referred to as a "loaf". If you Google "cornbread loaf" you will find numerous links to stellar recipes calling their delicious quick bread(s) "cornbread loaf". Estella, I truly hope I have sufficiently answered your query. Hi Rachel, I am really learning how you layer the flavors and let each one cook for a few minutes, I am going to try this with my recipes. This is the first time I have seen Chili made with beef stock instead of tomato sauce. So I definitely want to try out this recipe to see the taste difference. It looks delicious and if you say it's delicious I definitely know it is. You are a wonderful chef and easy to follow teacher, by explaining while you go along and giving ingredient suggestions if we want to use something else. 😊 I love all your aprons, and how organized and neat you are in your kitchen. Dearest Rachel, I am retiring the championship chili recipe that I have used for over twenty years. While it got rave reviews from all my friends and acquaintances who tried it, I have to say Your 5 star chili is OUTSTANDING!!! and is now the recipe I will use. I have made it three times with and without the beans for those purists who do not like beans in chili. It is the best chili I have ever eaten and I have eaten a lot of chili in my 77 years on this planet. I am making another pot of 5 star this week as the temperature here in Alabama the week of Christmas is giving us a High of 23 degrees on Friday. For Christmas presents for my friends and family I will give them your name and where to find you on youtube. I think that will be one of the best presents they will recieve. I've been waiting for this recipe in particular! I love chili. Seeing this has been a joy. A great teacher who is steady and articulate. Mexican restaurants are good here but many are crowded and carryout/delivery isn't that great. So it's refreshing to experience great Mexican food hot and fresh at home without reheating. Thank you!

Blooming all of your spices ahead of time before any of the liquid or meat goes in is a boss move. Builds so many layers of flavor. I make all of my competition chili in similar ways like this. People like to just throw things in a pot and bring it to a boil, but you can really make those flavors blend and pop by just taking some time and paying attention to how you use the ingredients. But I use celery instead of peppers. Just a personal preference. Oh, and bacon fat. Yes, please! :)

Rachel, thank you so much for the outstanding recipe! I have been trying to make a good pot of chili for years, but it never turned out quite right. My family Loved it! I did everything just as you did. I bought all the same spices that you used in your recipe, even the Mexican oregano. I ground up the cumin seeds as well. It is delicious! This is the best chili I have ever eaten! Thank you, and God Bless!

Hey Rachael. In watching this video and seeing how beautiful your pans and pot are, I now know why. I watched your video on how to clean them. I bought the stuff on Amazon and it came today, and i cleaned my blackest fry pan. It looks brand new!! I’ll do my Dutch oven tomorrow and any thing else I can get my hands on.
