How to make the best CARROT CAKE | EASTER SHOWSTOPPER

We are redoing a Carrot cake, this time we want a show stopper! So we are going to do 3 tiers covered in delicious cream cheese frosting and nuts, you dont want to miss it, and it's perfect for Easter Dinner too!

Ingredients:
50g Crushed Pineapple
225 ml Vegetable Oil
120g Caster Sugar
120g Light Brown Sugar
3 Eggs
260g Flour
1 Tsp Baking Soda
1 Tsp Baking Powder
1,5 Tsp Cinnamon
1,5 Tsp Nutmeg
1,5 Tsp Cardamom
125g Walnuts
270g Carrots
150g Butter
225g Cream Cheese
750g Icing Sugar

I say this a lot, but I really mean it, carrot cake is my favourite hands down! Something about that cream cheese frosting giving an already delish moist and light cake that bit of extra oomph is pure magic! 🥰

Yes, thank you! I love the crunch it brings to it, the different textures are everything! Carrot cake sponge is so soft and moist that it definitely needs to extra bit of bite and crunch that the nuts bring! Thanks so much Val I appreciate you! :)

wow Manny I have to say that's the most impressive carrot cake I've ever seen! pecans and walnuts are some of my favs and they really work in this cake! cardamom is such a unique touch to a carrot cake too! I love cardamom in my Indian desserts and that must have made this so special! the frosting just must be so delish! this cake is very impressive and so appealing for sure, takes any other carrot cake out of the park!

Thanks so much Roma! I love me some carrot cake! The purple strips are just called cake strips, you soak them in water and put them around your tin, the idea is that they keep the side of your cake tins cool so that you get a more even bake and your sponges doesnt dome as much, they are pretty handy!
