Hey Natasha, I made your carrot cake cupcakes and they were delicious. I substituted 1 1/4 tsp of pumpkin pie spice for the nutmeg, allspice and cloves. I also substituted 3/4 cup of yogurt for the 3 eggs. Since I did not have applesauce , I used the same quantity of crushed canned pineapple. Thank you so much for sharing your recipie.

Good for families with mixed tastes. My daughter dislikes nuts and raisins, husband likes nuts, I like both! These would let me add the extras in and make some with/without nuts and raisins.

Began making these then panicked when you said 18 cupcakes because I only have a one dozen cupcake tin. Thank G-d I decided not to put the raisins. I had to fill the holes generously and prayed it would work out nicely anyway. They did. I put a generous third cup of coconut sugar and they were definitely sweet enough. I also used 1/2 cup oil and added an extra third cup of apple sauce to make up for the difference. They were delicious and even more the next day. Thanks 🙏

Hi Natasha.. I just make this. It turns out so yummy and yes, moist! Thank you for your recipe. Easy to follow.. However, I tweaked a little😅 I replaced the applesauce with crushed pineapple, walnuts instead of pecans. I also mix white sugar and light brown sugar. Kind of sweet for me so next time I will reduce it. The frosting is superb! I add lemon juice. Sorry for the long comment. I'm just so happy 🤗
