Moist Carrot Cake Cupcakes with Cream Cheese frosting

These carrot cake cupcakes have a soft and moist crumb studded with pecans, raisins, and plenty of tender carrots, with the perfect balance of spices. You won’t want another carrot cape cupcake after these.

CARROT CAKE CUPCAKE INGREDIENTS:
►1 1/3 cups all-purpose flour
►1 cup granulated sugar
►1 1/2 teaspoons baking soda
►1 teaspoon baking powder
►1 teaspoon ground cinnamon
►1/2 teaspoon ground nutmeg
►1/2 teaspoon ground allspice
►1/4 teaspoon ground cloves
►1/2 teaspoon fine sea salt
►2/3 cup vegetable oil or extra light olive oil
►3 large eggs, room temperature

►1 1/2 cups finely grated and peeled carrots (from 2 medium carrots)

Hey Natasha, I made your carrot cake cupcakes and they were delicious. I substituted 1 1/4 tsp of pumpkin pie spice for the nutmeg, allspice and cloves. I also substituted 3/4 cup of yogurt for the 3 eggs. Since I did not have applesauce , I used the same quantity of crushed canned pineapple. Thank you so much for sharing your recipie.

Good for families with mixed tastes. My daughter dislikes nuts and raisins, husband likes nuts, I like both! These would let me add the extras in and make some with/without nuts and raisins.
