Oh, my. I just started growing lacinato kale and dazzling blue kale. I usually cook them ( including the kale ribs) for a long time with onion, garlic and ham hocks. Thank you for a yummy recipe.

This dressing didn't work for me, despite the tang elements, even after letting it sit for awhile. I had to rework it with a bit of sugar, additional mayo, (stronger) vinegar and more garlic/ seasonings. I know this might sound back-sliding on the health aspect, -- and I've made Caesar dressing a million times -- but it really wasn't good.

Letting the kale soak in warm water will make it lose precious minerals and vitamins (especially if the water is hotter than 107,5 F) Therefore I prefer to knead it a little and let it rest in the fridge to soften the fibers.
