It always cracks me up when they're like "a little bit of butter"... *adds entire stick* I understand that's probably a lot less than a restaurant is using, but c'mon man, most home cooks are going to use like a tablespoon or two at the most. Probably less considering you're also apparently dumping a quarter cup of oil into the pan as well.

Traditionally it is, a lot of times with semolina flour added for further binding.

@@zrbontrager there are all types of gnocchi, potato, cheese parisian, spinach, semolina etc. gnocchi is the shape.

Hmm when I make ricotta gnocchi, I've always used more flour and then roll them out and shape them but maybe I should try it with the pastry bag...

You can make gnocchi with ricotta instead of potatoes. The more gnocchi, the better

Gnocci aren't always made with potatoes. Potato gnocci are, though.

IAmScubaSteve33 A string tied across the top of the pot works better for cutting off each gnocchi. One less thing for your hands to hold.

This is NOT gnocchi. This is GNUDI. Distinctly different dish. You can't just appropriate a name for a different thing. Come on Bon Appetit.

I think you're making a false distinction. All gnudi are gnoccih, but not all gnocchi are gnudi. Ricotta gnocchi is just a subset of all the types of gnocchi (of which potatoes are the most common).

Looks greasy but other than that pretty good recipe. Super heavy handed on the oil and butter though. Like an oil slick in your mouth.

If you launch it into the vacuum of space, I hear it really drops the temperature immediately. Probably way more efficient than just using ice.
