Making the best lemon curd is really easy!!! Follow my 3 KEY steps and you'll never make curd any other way EVER AGAIN!!
Step 1: don't add all the zest while cooking, save half to add at the end. This makes it super tangy.
Step 2: Add butter after cooking. The butter emulsifies better making for a smoother, melt-in-your-mouth consistency.
Step 3: Cook at a low temperature to slowly get to consistency. Cooking too high doesn't produce such a creamy flavoured curd.
