This Low Carb Bread has proven way more popular than I ever anticipated.
For that very reason I have just updated the post to answer the many questions regarding it. Every day I receive so many photos of your creations, questions for substitutions, baking tips, etc. So, I thought it was time to try and answer them and do a few updates on the recipe and pictures.
LOW CARB BREAD, IS IT KETO?
Let’s start by addressing that this low carb bread recipe does contain gluten. So, for those of you who cannot tolerate gluten this low carb bread recipe is totally out for you.
Since starting blogging keto I have had my share of people telling me what is or is not keto foods. Keto is actually based on the state of ketosis right? Eating a very low carb diet to maintain a ketones in the blood is “being keto”. This recipe still suits that lifestyle but this bread does contain grain.
This low carb bread recipe only has 1g net carbs per slice, based on 20 slices per loaf, or 2g net carbs per roll, based on a 10 x 60g rolls from one batch of dough.
Originally inspired by Deidre’s Bread Maker Bread, Keto.luna, and She Calls Me Hobbit. This is easily one of the best low carb bread recipes I have tried.

I don’t have oat fibre yet but had to try it. I made one loaf using combo of psyllium husk and coconut flour to replace oat fibre. That loaf didn’t rise like yours. So I tweaked the recipe to increase volume. Used all coconut flour to replace the oat fibre. Used coconut oil to replace butter. Also increased the gluten flour by 50g. Then added 25g ground chia seeds for flavour and fibre. Omitted xanthan gum as you suggested. Sprinkled sesame, chia and flax seeds on top of dough before proving. Baked 50 mins tenting with foil last 10 mins. The result was AMAZING!!! Perfect chew. Net carbs 3g for 1/2” slice. Servings=18. Can’t wait to try it with oat fibre to reduce net carbs. Thanks for this fabulous recipe.

Absolutely the best recipe: I love the extra butter and the inclusion of inulin is a game changer. I hate the taste of almond flour and coconut flour gives me headaches. so finding this recipe made my year! I have used this recipe to make bread and buns. I have reduced the water and vital wheat gluten to make a wonderful pizza crust and bread sticks. Well done!

I made this today but didn’t get a good rise. I am guessing either the tin was too big or it hadn’t risen enough before baking. I will give it another try. I am not a quitter! Lol.

Hands down the best keto bread out there with or without gluten. Just made this and it came out great. It also toasts well which I found where many oat fiber/flax meal breads flounder. Thanks so much for this as it's a real keeper 😊😊😊

Made this for the first time last week and I halfed the recipe in case things didn’t turn out well. It turned out Amazing considering it is low carb and not wheat bread. Thank you for this recipe. I let my bread machine do the kneading - took it out and let it rise in the oven with the light on. I used sprouted flaxseed but only half the amount and substituted the other half w almond flour. When it’s done baking I open the oven door and let the bread cool slower. The recipe needs more than a "pinch of salt" and I’ll be adding more sweetener next time.

Made this again. Instead of going half sprouted flax and almond flour I went with half coconut flour because I was looking to sweeten it up. Success! I added a dash of monk fruit sweetener too and 3/4 teaspoon salt. I stated previously a "pinch" is not enough. I do get annoyed when people change a recipe and here I am doing the same. Just hoping to help others since I’ve been on sites where recipes get great ratings but they are not right. GREAT BREAD RECIPE. THANK YOU. 💗

This is the best bread ever Megan. i make it week in week out. Went from the US Pan to a Mackies tin with a lid - fantastic - fits so much better in the toaster. LOL. Just started making the rolls now too. Absolutely love it. Thank you.

Does the dough really make a full pullman? Mine is for 750g of dough, does it fits with your recipe?

Hi Jake, as the recipe is written it will do a 750g but not all the way to the top of the tin. If you use the sliding scale and make it 1.5 times the recipe you will get a huge jumbo loaf.

My bread collapsed 😢during the baking process after I put a piece of foil lightly on top so it didn’t burn because it was getting too dark.

Is that a question as to what it is why it is in the recipe? It helps to hold the bread in shape, create gluten-like structures and eliminates a lot of the bubbles in the loaf

I followed the recipe as written but it was a little wet so I added 3 tbsp of coconut flour, plus I added a couple tablespoons of allulose and nutritional yeast for flavor. Kneaded with the dough hook on the kitchenaid for about 7-8 mins on the lowest speed and rose for an hour at 80 degrees and cooked at 350F for 40 mins in an 8x4 inch pan. The loaf turned out great and it tastes awesome. I'm cooking for a relative who just got diagnosed with diabetes 2 and i've been trying to figure out a GOOD bread that won't spike her blood sugar AND actually tastes like bread, so this is literally a godsend. I tried a bunch of other vital wheat gluten bread recipes and they were all weird tasting or didnt rise or were way too chewy, etc. But not this one! :)

This video is too irritating to watch. Relying on the video camera microphone without a dedicated microphone, usually on a headset, makes the voice difficult to understand and picks up all of the extraneous noises making this irritating to listen to. Have a good day.

Yes. The background noise is irritating, but her tongue clicking is moreso. I saved the recipe and will try it, but I don't think I'll be watching more of her videos even though I like her accent.
