Ingredients
4 1/2 AP Cups Flour (1 Cup extra AP Flour for dusting)
1 1/2 Teaspoon Ground Cinnamon
1 Teaspoon Ground Ginger
1/4 Teaspoon all Spice
2 Teaspoon Baking Powder
1 Teaspoon Bakin Soda
1 Teaspoon Salt
1/2 Cup Canola Oil (You can use Butter or Shortening)
1 Cup Brown Sugar
3/4 Cup of Piloncillo Syrup or Molasses
2 Large Room Temperature Eggs
1-2 Tablespoons Vanilla
1/2 Cup Milk
*If you use Molasses use 2 Tbs Vanilla
*If you make the Piloncillo Syrup add them to the blend
Piloncillo Syrup Recipe
1 Piloncillo
1/4 Cup Water
1/4 Brown Sugar
2 Tablespoon Vanilla
Egg wash
1 egg
2-3 Tbs Water
Cook down in the saucepan for 15-20 Minutes. Mix well until the Piloncillo has diluted. Mix often and let rest 15 Minutes till it cools. Consistency should be like molasses.
Bake at 350 Degrees 15-20 Minutes
Temps and baking times vary for every oven. You are looking for good toasted color. My oven takes 18 minutes for the 1st batch and 16 for the second batch. Once the over is hot it will all bake smoothly. Try baking one cooking; That way you know what type of heat you are working with.

It's funny how one word can trigger a memory. Miss Cloud mentioning macaroons reminded me of when I was a little kid and my mom worked at a bakery, and she would have an evening shift here and there. So I would go with her after school and sit there, watch all the various characters, both workers and patrons, come and go. Anyway, they made the best macaroons, and the owner's mother (Mrs. Kartzman) would bring me a few on a little plate, pinch my face and smile. I haven't thought about that in years. Thanks for the excellent work, ladies.

To answer your question, yes you can freeze this cookie dough cuz I make big batches in advance for the holidays all the time. I wrap my dough in clear wrap then place in freezer bags then when ready to bake bring dough to room temp but keep wrapped. Also, I usually chill my cookie dough at least 30min to an hour before rolling out to bake so you don’t have to use to much surface flour when you roll out, also sometimes if you use to much flour the cookie can come out to tough. At least that’s been my experience. Hope this helps the new bakers out there.

I love how you actually show us when something goes wrong like when it was sticking and you re started to shape it like you dont make it look perfect and edited out. Helps us when we are trying the recipe we know what to do if it sticks we know not to give up and that it could happen.. idk if i my comment makes sense

I learned how to cook by working my way through college in restaurant kitchens, but REALLY learned by watching cooking shows, especially Julia Child! You are blessed that you learned from your wonderful mother. My parents were scattered away from their families during the depression, and have no real cultural recipes. But I do have a recipe book in which my grandmother copied newspaper cookie recipes by hand. My girls and I bake for Christmas from it every year. I cherish that time!

Hi Stephanie and Cloud. Thank You for making the maranitos,. I never knew that they were like a ginger snap, I just love the flavor. I have bought different ones from different baking store, but never tasted the same I bought one that tasted like a Tin can. So I haven't bought them anymore yup I miss them. again. Oh my gosh, my hubby’s dad was a panaderio in S.Texas and had his own restaurant before I got a chance to meet him before his death. Will show this vid to him. Maybe for Christmas I’ll make them and decorate them as Christmas Piggies/cookies! I said “maybe.” Lol... I hate to bake. Y’all are the bomb! Aye! What memories!! When my dad would make tacos, he always used fresh tortillas and he would take me with him to the local Mexican bakery and let me pick out any treat I wanted. I always picked the puerquitos.....yummmm! Thank you for the recipe and for bringing back some wonderful memories!

I love your videos. I love that they are long, and are very specific. Visuals are always a plus, and to see you do it first, makes me more confident, to make it on my own. When cookies are too delicate to pick up, for myself, I use the scraper tool, I’ve seen you use before to gather your dough together. Works great!

Ah ha, I remember these from my aunt's house in the winter and Easter. I remember these cooky cutters in my mom's draws. I always thought that these were because we lived in Iowa. LOL. Mom always said they were ginger snaps when they think and gingerbread when thick. Mom always put pink frosting on them. Black candy pieces or red hots. When we got older we told her the ones with the red hots were pissed off pigs. We were really spoiled when we was kids cause my mom or aunt always had sweets for us any time of the year. I could never use a dough roller like my mom used. Hers was a piece of two foot long and two inch thick wood dowel. Never new where it come from it was just there as long as I can remember. I love you....wish I could cook with you! Spending 10 yr inPhoenix, I developed a great fondness for Mexican recipes from all areas of Mexico. I cook many different cuisines because I worked in a lab that was very international (on second shift) and we had lots of international meals. Do not shorten your videos....it makes it seem like we are visiting. Very appealing.
