I made this last night and my husband was so impressed! He’s Jordanian and I’m Mexican so he always gets so shocked when I cook middle eastern food lol he called it something batata I forgot what he said it was but he was very happy! I’ve been meaning to come back and comment. I made this recipe I believe already 4-5 times today will be my next time. This is beyond amazing. I didn’t add the lemons pepper though or thyme and it comes out amazing and moist. Even my daughters ask for seconds! Who would think I took a recipe off off KZbin for something so simple but yet it made a difference. I never bake my chicken any other way anymore. Thank you!

My grandma made this as well but she added marjoram, thyme,mint and bay leaves. once all the ingredients are ground up and the chicken it's marinated it looked green, we called it "Pollo Verde" it's still on of my favorites ❤️ Next time I'll add tomatoes and the other spices thanks for the delicious recipe!! I would slash the baking by a half, so 30 minutes, though it also depends on the kind of potatoes you use. Some kinds of potatoes require 40 minutes.

Place the slices of potatoes over the chicken.Place the tomatoes over the potatoes. Place in the preheated oven and bake the chicken and potatoes for 30 minutes. After 30 minutes, take the potato slices and place under the chicken, and bake for another 30 minutes, so now the chicken will brown.

The potatoes act as the foil, nature's foil :) So bake it 30 minutes with potatoes on top. Then after 30 minutes put the chicken over the potatoes and bake for another 30 minutes.
