I just made your recipe in my new Pullman pan. The pan is great but your recipe is absolutely WONDERFUL, without a doubt the best I've ever made. You need to use your oven as a proofing oven. Turn the oven on to 200 and let heat up a bit, depending upon your oven, the fuel source etc, it'll only take a few minutes, once you feel that the oven is warm, turn it off.. Make your dough, place in bowl, cover and place in the proofing oven to rise. Punch down shape, fill pullman, again, turn to a warmed proofing oven and let rise. This will significantly cut down on the time needed for rising. I only ever skip this if it's hot, in the Summer. 45 minutes-1 hour for first proof. 30-45 minutes for second. I've done this in a 68 degree home (up here in CT), and it makes a big difference. HTH

I make a lot of bread. Very good bread. I am always trying new recipes and this one is in my top 5. Excellent bread. I have 2 Pullman pans so I doubled the recipe. I only increased the yeast by 1.5. What a fantastic recipe. Thank you for sharing.

I first saw the Pullman loaf pan on the Kneady Homesteader. That pan seems amazing. I do not make homemade bread because I live alone and that it too much bread for me. I tend to throw away a lot of bread. 🙏 for the house situation and keep you and your family safe.

I have gone to slicing it up and only keep out a few slices to eat and freezing the rest. I pull out a couple of slices and defrost it in the toaster. This works great and you get the benefit of homemade bread.

In the winter I put my dough bowls and bread/rolls pans on a heat register and cover it with a towel to rise. It works great.

I also let the baked bread sit in the pan for 15 minutes before I take it out of the pan and then cool it on a rack. It helps keep the loaf from sagging.

Ok, I am trying to start learning to bake bread at home and I purchased Pullman pans, but I got the smaller 9x4x4 Pullman pans so they will fit inside my Sun Oven. So that I can still bake bread without electricity. I have made a few batches and so far I can not figure out what amount of dough I need to make to properly fill the Pullman pan. I have tried both a 1 and a 2 pound recipe, neither of them seem to be correct for this sized pan. Do you have any idea where I can get a recipe that will work properly in this Pullman pan?

Wow! I’m having a deja vu! I just watched a video before watching you & both of you had the same EXACT recipe, with different bakers! Is this the only recipe for Pullman pans or can we use other recipes? I was kind of hoping to use this fo a variety of sandwich breads. I guess I’ll watch a third Pullman pan video. If it’s just like the first & second one, I’m going to turn off the TV and go outside because I don’t like being in the Twilight Zone.

If you do not want to invest in a pullman pan, you can simply let your dough rise for a bout half of the usual time during the second rise. It will result in a more dense loaf that resembles sandwich bread. You can also cover the top with foil during the last 10 or 15 minutes of cooking to prevent over Browning.

Can you do bread easily without a dough hook? All recipes call for the dough hook and I wasn't sure if by hand was manageable

I should add that you will knead the bread longer than if you were using a hook. Probably 10-15 minutes or until the dough is elasticy and smooth.
