Pro tip(s) put just a thin layer of sauce on top and cook on bottom of oven until crust crispy underneath. Remove, add more sauce, cheese and toppings and cook on top rack until cheese is bubbling. Just a little sauce on top shouldn't prevent the crust from fluffing up.

Nice job, Kyo. My sauce is 1 can of Bianco Di Napoli Whole tomatoes, 2 cloves of garlic, 1 cup of fresh basil, 1 teaspoon of chili flakes, salt and pepper to taste, 2 anchovy fillets (salt with benefits) and 1/4 cup of EVO..pulse in a blender til slightly chunky. Makes a great pizza or pasta sauce.

Great video ! A good trick I have is resting the dough in a rectangular plastic container and flip it in the pan after 2 hours so it already have the right shape.

Going to try the dough, using sauce from when my people immigrated in 1890. Peasant food - olive oil, onions(allot), garlic, hand crushed whole tomatoes, herbs, cooked down. Cookie sheet, sauced, more olive oil, romano cheese.

Tip: add a bit of sugar to your tinned tomatoes. That gets rid of the metallic tin taste you get sometimes.

parbake the dough first with a little layer of tomato sauce first and then top and rebake. way crispier.

Definitely par-bake, especially thicker Sicilian pizza. Thin grandma, you can get away w/o par-bake-500 degrees lower rack position, 15 minutes, turning once, comes out perfect.

Made this, dough recipe and sauce recipe are spot on. I changed out the mozzarella for low moisture as i hate all that liquid on top of the pizza. Whole milk mozzarella is best for really hot ovens imo. 425 isn't hot enough to burn off all the moisture in the amount of time it takes to cook.

i use the same moz as he does but let it sit out on paper towels once cubed for the hour the dough is resting, that and patting with paper towel helps battle the moisture issue for me

Good if you like it bready, I like thinner crust. Fresh mozzarella can't be shredded and be careful, don't use too much, it's full of water. Add sauteed garlic in olive oil to the sauce, never garlic powder. Italian grandmothers don't use garlic powder, I'm not sure they even know what it is.

There is really bad sound on this. One minute I can hear you in the next minute I can't! If the dog keeps pulling back just let it rest for a few minutes it will work. I used to freak out when it would snap back on me and it's just like a person walk away and when you come back it will be more relaxed. :-). Sorry if there are run on sentences but I am very sick and I am voice typing so it's coming out like I would speak.
