Just made this and OMG! Best vegan Mac I have made so far. Who knew the key all along was lima beans and oat milk! The only addition I made to mine was Cumin, little turmeric, chilli, cayenne garlic and onion powder. Even my sister who hates any food that imitates traditionally non-vegan food went for seconds. Next is my brother in law. Im going to serve it and see if he even notices. Thank you for the content! this channel has helped me become more confident in being more creative and not making excuses to replace cheese and pizza in general!

Made the baked version using Miyoko’s Pepper Jack shreds instead of vegan parm and it was so delicious. Pretty sure it’s the best vegan mac I’ve ever had🤩 (I also reduced the salt by 1/2 tsp and used all purpose flour and unsweetened almond milk)

This is awesome, you are awesome, thanks for sharing. May I offer a tiny suggestion? If you want the cheese sauce to be more orangy color (for your doubting vegan guests) just add a but of Turmeric ONE TBSP and some roasted chili powder..1TSP.
