One piece of advice: when you add the soy milk to the cooked flour/fat (roux) mixture add it in small increments while stirring. It will result in a smoother final result.

Made mac & cheese last night using blended tofu for the base of the sauce. It will probably be my go-to way now. I use a mix of vegan cheeses. My son didn't notice any difference from how I usually make it either.

As a German I have to strongly recommend you to try substituting the macaroni with (vegan) Spätzle. Vegan Spätzle are a bit more difficult to make than Spätzle with egg, but they're so worth it.

Honestly, not really. I use aquafaba and soy milk. Comes out great! Spätzle is one of my son's comfort foods and so good! Great suggestion!

Nooch, cashews, plant based milk, mustard, in a blender. Season how you like (salt pepper onion powder garlic powder) top with crispy onions, add vegan bacon pieces.

in germany we have a extra word for that "butter + flour", it's called Mehlschwitze ;) The potato version I know with carrots added, but cooked befor blending... the peanuts probably were gritty because you didn't use the power blender, but it's interesting, coud be a cheaper option to the casew version (I'd also let the peanuts soak like cashews before)

I've made quite a few vegan cheese sauces and the comments from family is always "I dont like it" but I made the potato recipe and added just a bit of vegan cheese shreds at the end. The comment was "yeah it was good". So thanks for the recipe!

Watched you heavily a few years back, then i had kids and found myself ripping open impossible meats on the daily just to get by. Now I've thrust myself back into the kitchen armed with bulk organic everything and a well-organized pantry and I've been trying one of your recipes almost daily. I am SUPER PUMPED to try these out! I'm sure the kids will be stoked as we haven't had mac and cheese in a few months! All that to say, i want you to know how happy i am for you on your journey, and how grateful i am for your help on mine! Keep going dude! PS. It would be nice if you revisited some of your typed recipes, I don't mind rewatching the video a couple times, and I almost always do, but it's difficult to not have a well-written recipe to use when it comes time to start cooking for the family.

Have you ever tried a potato and a carrot, cooked a little, and blended to make a vegan cheese? The carrot adds a bit of extra flavor. And you can still add garlic powder, etc.

I appreciate all of the Mac n cheeze recipes. I have watched a few of your cheeze sauce recipes and I am going to be trying the one with tofu and chickpeas from the other video and the potato one from this one. Chef AJ does a cauliflower version for low calories. And another woman uses potato flakes instead of potatoes. A third woman uses oat flour and red peppers and liquid smoke.

Gotta make sure you don’t use sugary and vanilla plant-based milk. I’ve even used unsweetened soy milk (no vanilla in it, too), and it still comes out sweet to me for some reason. I recommend using unsweetened plant-based milks other than soy milk for cooking with savory recipes. This is important to note.

For me depends on the brand if it's sweet no matter if it's the sweetened version or not, those ones in the cartons that don't need to be refrigerated until after opening are usually much less sweet than the others

I'm gonna do the peanut and yogurt--with a few additional seasonings because I prefer a sharp cheddar mac and cheese--but I'll cook the heck out of the peanuts to get the grittiness out [thanks, Mrs. Stache, for mentioning that!]. It's too bad Elmhurst stopped making their peanut milk, because it would have been perfect for that recipe : ( Thanks for posting!
