This is not just flatbread. This is THE flatbread. A recipe I developed to satisfy the child in me. A crispy potato flatbread that is made of so much crispiness that it just sings. The golden crust is exploding with flavor, when you start eating you cannot stop. If you love crispy, golden, and tasty flatbread, then you will love this recipe!
This potato flatbread is easy to make, with only a few simple ingredients. You will need:
• One big potato or two medium ones
• All-purpose flour - ¾ cup (100 grams)
• Cornstarch - ¾ cup (100 grams)
• Grated Parmesan cheese - ½ cup (50 grams)
• Salt - 1 tsp.
• Water - 1 ⅓ cup (320 milliliters)
• Olive oil - 4 tbsp. (50 grams)
• Fresh or dry rosemary leaves
• Coarse salt
The preparation is very straightforward. You just need to mix everything in a bowl, then grate the potato and add it to the mix. Then, you pour the mixture on a baking tray lined with baking paper, drizzle with some olive oil, and sprinkle with rosemary and coarse salt. Bake it in the oven until the crust is golden brown and crispy and here you have it! The best potato bread you could possibly make.
