Made this exactly the same way. It was really good and easy to make! This is the most seasoning I've put on chicken and I'm pretty heavy handed but not this much, I was nervous but if came put perfect. I made these for Christmas 2023. I did 2 chickens, one with your recipe and the other I rubbed with a little tomato paste, little soy sauce, whole culantro placed under the skin and under the down side of the chicken, olive oil baste and your seasoning.
