I made these for Christmas 2023. I did 2 chickens, one with your recipe and the other I rubbed with a little tomato paste, little soy sauce, whole culantro placed under the skin and under the down side of the chicken, olive oil baste and your seasoning. Do you let it marinate in the seasoning for at least 30 minutes before cooking? Following up to this message 12 days later. I made this chicken it was ok. I am from the Caribbean so I marinated it the seasonings for about one hour before cooking it. My American guest loved it. My Caribbean friends thought it needed to be more seasoned. But thanks for the recipe. Either way it was a beautiful looking chicken when done.
