The FUDGY brownies are my go to recipe for when I'm craving a quick bite of chocolate! Here are my tips for the fudgy bois: 1. If you're averse to cleaning bowls, I find that my brownies turn out fine if I mix the wet ingredients together first and then add the dry ingredients in one by one into the same bowl. Saves you from cleaning the separate bowl Josh uses for dry ingredients. 2. I preheat the oven AS SOON AS I decide I wanna make brownies. My next step is to get the butter into an oven safe container and place it in the oven while preheating. That melts the butter for me while I gather other ingredients. 3. Forgot to leave your eggs out at room temp beforehand? I like to place my eggs in a bowl of warm/slightly hot water after I take them out of the fridge. That brings them up to room temperature fairly quickly. Just don't cook em! 4. Don't have espresso powder? I find that using instant coffee works well as a substitute. Depending on how large the bits of freeze dried coffee are, you may want to dissolve it in a MINIMAL amount of water first. That prevents you from getting bitter little bits of instant coffee in ur brownie. 5. I personally found this recipe a lil too sweet for my taste, so I tend to decrease the amount sugar from 280g to 230g. Sometimes even more if I feel like it. They still come out tasty! 6. My batter comes out THICC. Thicker than I'm used to brownie batter being, at least. If yours comes out thiccc, that's normal. Don't worry. 7. Sometimes I skip the chocolate chunks. The brownies come out fine. 8. Make sure to let the brownies cool a lil before cutting and taking them out of the pan! Otherwise cutting is a nightmare and your brownies will be a mess. 9. A standard loaf pan is the perfect size for making a half batch. To make a half batch, I just halve all the ingredients and decrease the baking time. I use the toothpick test to tell when they're done. A half batch takes me a lil over 20 minutes to bake in a loaf pan. Enjoy ur fudgy bois!

I made the fudgy and the chewy brownies at the same time to compare them. Didn't add chopped chocolate so that I could really taste the difference. The recipes are almost the same (main difference being the brown sugar). The chewy ones were much more beautiful. But we all preferred the fudgy ones. They were both very good and, honestly to my surprise, very similar in taste. But the fudgy ones were just a little bit better. Such an easy recipe, fast, no chocolate melting and super tasty. Thanks!!

2:24 #2 Chewy Brownies: Melt 1/3 cup / 70 grams unsalted butter 2 tablespoons / 24 grams oil Whisk in a separate bowl: 1/2 cup / 73 grams all purpose flour Rounded 1/2 cup / 56 grams cocoa powder 1/2 tsp / 3 grams fine salt In medium large bowl combine: 3/4 cup / 150 grams brown sugar 1/4 cup / 63 grams granulated sugar Whisk together then add melted oil and butter mixture and whisk well. Add 2 whole room temp eggs one at a time whisking vigorously to emulsify but not letting it break. Then add 3rd egg but just the yolk. Then 2 teaspoons / 6 grams vanilla extract. Gently mix in flour mixture til smooth and glossy being careful not to over-mix. Bake in 8x8 pan at 350f / 175c for 30-35 minutes or until toothpick comes out clean. Cool before serving.

i think it would be cool to make your own 'box mix' at the start of the year for all your favorite snacks so all you have to do is add the wet ingredients and bake so if you need a last minute party snack you can whip up your perfect recipe of cookies or you forgot someones birthday, they never would have had anything like it because its your own unique recipe but you have half of it prepared in advance

My family loves cheesecake brownies, fell in love with a box recipe (I know, I know, it's the devil) but as it became harder for my mom to find I learned how to make the cheese part. Add softened cream cheese and sugar into a bowl, mix well then add an egg and vanilla extract and continue mixing. Take any brownie mix, double your recipe for a deep brownie and add the cream cheese on top and gently swirl in. Delicious! 8oz cream cheese 1/4 cup sugar 1/4 teaspoon vanilla extract 1 egg

For the fudgy boys I'd brown the butter and reduce the sugar by at least 25g or so. Go half brown sugar and half regular sugar. You can also add a tbps or 2 of leftover morning coffee in the batter to really boost the chocolate flavor, alot of espresso powders barely enhance anything specially if you're using ducth cocoa I'd say use natural instead and you'll really taste the coffee and chocolate working together along with the brown butter. Also let the batter sit in the fridge overnight and pull them out out of the oven when there's still a bit of crumb and fudge sticking on the toothpick.

The brownies in this video are bomb! Though I do have a question. My batter ends up thicker than shown in the video despite using the measured ingredient amounts. Maybe it's an altitude issue, but regardless, what do I use to hydrate my batter while still maintaining the fudgy or chewy texture?

When the eggs don't mix properly with any kind of oil (butter) and they just become a sad mess. Hard to explain 4me not native english speaker :-(.

When it breaks, the butter and egg separate and you can see little dots or droplets of butter/oil floating in the mix. At least I assume, I mean that is what mayonnaise looks like, when it breaks.

It's when the butter and egg imulshin (idk how to spell it) separates so you get egg chilling at the bottom of the bowl with the butter floating on top

Don't just add your herb to the mix. Melt the butter and then add the herb to that. Let it simmer gently for about 20-30 minutes then strain. Now you have weed butter which you can add to anything.... like your morning toast

1/3 cup unsalted butter, 2 tbps vegetable oil, medium heat 1/2 cup flour 1/2 cup cocoa powder 1/2 tps seasalt 3/4 cup brown cup 1/4 cup granulated sugar 2 whole eggs 1 egg yolk 2 tps vanilla extract 350 30-35 minutes edit: made recipe, is good, though I made them a bit thin cause i think i used a 10x10 pan

Brown the butter before mixing (toasty delicious flavourinos). Beat the eggs with the sugar first then stir in the butter (saves the split butter problem). Less Cacoa powder and replace with melted chocolate, use decent Cooking chocolate. Mix in chocolate chunks. I use a ton of vanilla paste and maybe three times as much coffee powder, using the instant crystal stuff and then letting everything stew in the fridge for 40 hours before baking. Oh and freeze the brownies after baking to cool them super fast and retain moisture. A lot of this is in the Alvin Zhou vid, but he doesn't use brown sugar which is super good too.

Hey Josh! I made these 4 times already, 3 times fudgy, and once the chew and I found that there's something that should be hilighted: the time you give ONLY is for 8x8 pans, and even then it may be too long. I used a 9x9 metal pan and that extra area made it less than 1/4 thinner. Even with that small difference, cooking at the low end of the range, 30 mins, dried out my batch of chewy brownies so they were almost inedible :( HOWEVER, I had made a double sized batch of fudgy previously at w/ 35 mins and that turned out pretty great. BUT I made a 1.5x size batch recently (which I feel gives a result that isn't too thin like 1x and not too thick like 2x) by baking for 27-28 minutes and letting the tester be a bit wet, once cooled they were, indeed, "fudgy as FUCK"! 30 minutes would have worked for 1.5x, but for 1x, at least for the chewy recipe, they were too dry. I honestly should have known better about the timing! Thank you for the recipes!

Damn, should read comments before baking. Same experience - fudgy one became rock hard super dry after 30-35 minutes. It seems like 25 minutes is ok if you use metal tray.

I made the chewy 3 times, each time using an 8x8 brownie pan. Bake #1: Following the recipe exactly with the bake time of 30 mins., the texture to me was too dry. Bake #2: Added 3 TBS of oil. For the sugar, I used 3/4 cup of brown sugar and 1/4 cup of granulated. I only baked them for 22 mins. and the texture for me was almost perfect because they turned out a little fudgy and chewy, which I prefer. Bake #3: This time I decided to follow my Bake #2 but I added 3 melted squares of semi-sweet chocolate from a Ghirardelli baking bar. Just about perfect. The next time I'll add some coffee. It just needs a slight boost. Nothing wrong with experimenting.

I use mix if I'm in a hurry. (Ghirardelli dark chocolate mix is my go-to). I think the video is mistaken. People don't go for mix because they think it's better than homemade, but because (a) it saves time or (b) they aren't comfortable with their cooking skills.

Regina Billotti ah yes, a Ghirardelli stan. I generally use it bc my mom used it when she made brownies. I honestly want to try making them from scratch but generally like the courage or time lol.
