The reason your batter looked more liquid than the one in the video when serving it on the tray is because you beat it with a fork while she used a mixing machine. If you ever make cakes that require sponge cake, i recommend you use a mixing machine aswell since it fills the mixture with a lot of air, making it more dense and helps with the texture to feel lighter (plus its necessary for sponge cakes if you want them to rise)

This is one of those times you really really need an electric whisk, this is why your mixture was so wet compared to hers, and why you had clumps. You physically, no matter how much you try can't aerate and whisk the mixture to the same degree with hand unfortunately. It makes a considerable difference and honestly will make or break. Mixing correctly is one of the most important things in baking.

I think dense brownies are so good because its a lot of oil/egg/moisture, so a dense brownie isnt dry or tough, its soft and gooey. A lot of other deserts get tough and chewy when they are too dense.

@@royd209 it wasn't the worst, but I didn't have enough fridge space for 2 full sheet pans so it went in the trunk of my car in the winter, which may have contributed to the issue. It just was sort of bitter from all the dark chocolate and low sugar amount. The coffee cream and the whisky butter were A+ things I use often now though

3:32, "always crack your eggs separately to avoid any shell" - yeah but much more importantly, if you get a bad egg (sometimes there's blood and stuff) then you don't ruin everything. best practice is to even crack them individually, like you don't want to crack five eggs and have the sixth mess the rest of them up and you have to start over

I made that recipe a few times for my friends and family and they beg me to make them for every social function, it is that good, especially for younger ppl who don't mind that it is made out of pure butter and sugar(I even tend to add less than in recipe).

In my experience, views quality is more like a bell curve. There is definitely a point beyond which most recipe videos are more likely to be clickbait-y or otherwise inflated (like the ones that get ported to imgur all the time). My best results are from 10k-100k views.

If you want to just adhere the parchment paper to most surfaces just sprinkle the surface with water. Butter is there because... idk tbh, parchment is already making it nonstick and is preventing it from adding any flavor so... its there to grease up your dish :D

I'd love if you would recreate a cake that I swooned over in my youth, made by a client - it was an amazing, tall, vanilla cake that was dense like a POUNDCAKE enriched with cream cheese, speckled with glace cherries and walnuts and made in a tube pan if I recall correctly. Frosting absolutely not required. It was plain and old-fashioned, and DIVINE. I love your channel, you are very funny btw...I subscribed after the first video. ❤😊
