My Yiayia would put the bowl and grater in the fridge so there was more cold tools to offset her warm hands. Kinda helps me when I do stuff like this

Grate the butter into a bowl that is 1) just out of the freezer and 2) sitting inside a larger bowl of ice. Keeps the temp way down and greatly reduces the likelihood that the butter will get anywhere close to room temp.

Bonus: mix shredded cheddar into the dough before baking. Brush with melted garlic parsley butter afterward. You'll wind up with biscuits better than anything red Lobster serves.

Wondra flour is wheat flour that has been pre-cooked and dried. If you think of instant oatmeal (oatmeal that's par-boiled and dried for faster cooking), Wondra is the flour equivalent. Like pastry flour, Wondra is lower in protein than all-purpose flour and comes very finely ground. Can’t get this _AT ALL_ in Japan.

I am an advanced baker, used quality butter and KA flour. Rechecked the measurements (used a scale) a second time and my biscuits were sitting in a puddle of butter while baking. So confused.

50/50 butter and lard, buttermilk and self rising flour is what makes the best biscuits. Those look too hard. A great biscuit is light and airy, almost melting in your mouth, not crunchy on the outside.

Everybody always folds their biscuit dough. I don't like that. If you want Hardee's/McDonald's style biscuits, DON'T FOLD. You don't want layers -- just clumps. Once you spread your dough out onto the baking sheet, just cut out your shapes and toss 'em in the oven.
