I used this recipe last night. I used a mixture of oat milk and regular milk for the milk/sourcream part. I also used 2 9" round pans and baked for 35mins at 350°. The edges came out a little on the crisp side, but the inside was very moist and flavourful. I also used regular Hershey's cocoa powder. It was delicious. Thank you!

Have been on the search for a great chocolate cake with a good rise. I make this cake today didn’t rise as high as I wanted but that could have been from old Baking soda or using eggs that were smaller. Will definitely try again with fresh baking soda and larger eggs. It tastes fabulous!!!

This chocolate cake works perfectly for cupcakes. Reduce baking time by about half. My white does not convert unfortunately

Just a question as my home town is quote humid and if I freeze my cakes prior to decorating, I feel like they might sweat while decorating... do you decorate straight from the freezer or wait till they're room temp? It’s pretty dry actually where I live. If you live where it’s very humid I would try popping your cake in and out of the fridge instead of the freezer. Extreme temperature changes caused the sweating

Made this recipe exactly as posted for cupcakes. Ended up with 31 cupcakes from the batter, probably could’ve filled some slightly higher and gotten 30 out of it. I would aim for closer to 2/3 full if you want a good rise (I don’t like to see the wrapper edges on mine!) I started at 12 minutes and added in 2 minute intervals until done. First batch took about 16 minutes and the other batches went a bit quicker since the pan was hot. Overall they came out perfect. So tasty and not dry at all. And honestly not overly sweet which helps when you add tons of buttercream! I topped mine with one swirl of Oreo buttercream and they were amazing. I could eat that buttercream with a spoon!

They rise quite a bit. Barely 1/2 full I would say. Easily makes 2 dozen cupcakes, possibly more. Would be delicious with the pb buttercream 😊

Love your channel. Like to see people follow their dreams. But I have a note for you, don't use a metal spoon to scrape the inside of your mixing bowl. Always use a silicone spatula. That ensures that you don't remove the protective food coating in the mixing bowl. If you realize the metal attachments don't ever touch the inside of the bowl

I usually decorate my cakes frozen so I’d wrap them and freeze. You can also leave on counter but wrap them up. I don’t recommend fridge until it’s fully decorated. The fridge will dry it out

Do you let them cool completely in the pan or take it out hot to let cool on the rack? I set mine out for about 15 minutes before taking them out and only one came out perfectly. The other two left some in the pan

I take them out after about 5 to 10 minutes but that has never happened to me. Make sure you grease your pans really really well. You could try adding some parchment on the bottom after greasing and then grease again on top of the parchment and see if that helps

Love this recipe but I find that it’s not chocolatey enough for me I use the Hershey’s regular one and I know you use the dark. If I add more cocoa powder, should I add any additional wet ingredients to ensure the cupcakes are still moist? Thank you so much!

I made this recipe a couple weeks ago & I had to keep it in the oven for about 15 minutes longer (I was using 2-8" rounds). The center of both cakes was really unset & each time I checked with a toothpick it kept coming out with batter on it. I also followed the freezing techniques & made sure to wrap the cakes really well with plastic wrap. This past weekend I stacked & decorated the cakes frozen, set them in the fridge for about 29.5 hours, & then set them on the counter for about 2.5 hours before eating. Sadly, the cakes were really dry. What did I do wrong? I followed the recipe to a "T" & I'm sure it's due to how much longer I baked them but I think the center would have been raw if I wouldn't have kept them in the oven.

Hi, I have made the cake myself numerous times and it has never turned out dry (especially since we are using sour cream and buttermilk). My first idea is that you turned the oven to the wrong settings regarding the fan setting or your temperature is off. Secondly, did you use both buttermilk and sour cream? Thirdly, baking cake batter and checking with a toothpick is only a guideline, not a set rule. If you waited until the toothpick came out completely batter-free, then you overbaked your cakes and thus dried them out. Try researching other ways to tell if your cakes are done and try baking them one by one instead of two at a time to ensure more thorough baking, especially if your oven older or not made for "larger" baking. best of luck!
