I must be weird, I like kale. It’s nice and hearty. One quandary though with Dan’s kale cleaning order of operations, I always struggle with the order when cleaning any greens regardless of it being romaine, kale, etc. I see his logic; however, if you cut before cleaning are you causing a good safety issue by pushing possible bacteria/contaminants into the broken cells of the green? Yes, you wash it before eating, but does the “bad stuff” get in and not wash out? It’s almost like you should wash then cut then wash again (at least for kale). No? Oh, and I can’t help myself, the pasta needs more sauce :)

Washing vegetables is mostly for removing dirt and sand. If they're contaminated with listeria or something there is no amount of washing that will make them safe to eat.

Good lesson. Question if you are not going to put meatball in sauce, how long do you suggest frying. Also do you ever suggest adding garlic for flavor? Last question fish allergies for the sauce, any substitutes?

If you don't want or need a lid or need to buy an extra if one gets damaged. It's just the normal way of doing things in the food service industry. So please tell me, why in the world are lids sold together? Convenience is the only answer. And the fact that unnecessary new shapes and sizes come out all the time. Cambro makes the same sizes and shapes forever so no fear of replacements stopping production.

I guarantee that the vast, vast majority of people who buy a container for flour or sugar or whatever want and expect a lid to come with it. Like I said, without a lid it pretty much useless Second, chill the hell out lady! I'm glad you shop at restuarant stores, but not all of us do.

One of the best episodes! Great info. re: washing Kale, and I agree with another commenter that the finished Kale Caeser Salad looked a little wanting - addition of chicken to the salad would have been nice. Would like to see an entire episode or two dedicated to kale recipes since this is the new "it" food. I'm sure there are many cooks out here like me that are hesitant when it comes to an unchartered food territory.. Also, the turkey meatball recipe looked fantastic, can't wait to try it out. Been wanting a less fat/cholesterol alternative meatball/meatloaf recipe and this one really looks like what I've been searching for! Thanks so much to everyone at ATK for all your research and hard work. Your programs help all of us out here be much better cooks! :-)

Caesar salad does not have chicken. They're showing you a recipe for Caesar salad. It wasn't a dinner, it was a side salad. If you want to lay a piece of chicken on top and make it a dinner, go look up any one of their many chicken recipes.

That people with gout should avoid turkey appears to be a myth. Which is not surprising since turkey and chicken are closely related. But feel free to substitute chicken if you want a less flavorful meatball.

I'm just an amateur home cook and I have never made chicken meatballs but the water content is the same but chicken is slightly fattier so I dont know what that's gonna do to your meatball but i imagine it would probably work just make sure you get really lean meat

Good recipe for a lighter version of Italian meatballs. Bravissime a Julia e Bridget! They are doing pasta exactly the traditional way -- it is more about the pasta flavored with "quanto basta" of the sauce, and not about the sauce with drowned pasta.

Canned or jar anchovies can vary how much salt they'll bring to the dish. I think since they added salt to the meat mixture, they wanted to control the saltyness, this way, if we make it, it'll come out as intended.

If you're going to use 85% lean turkey, then what is the point of using turkey? Why not just use 85% lean beef and not have to add gelatin to it? Ground poultry skeeves me out anyway...

For one, it's a different taste. You might as well ask why not bread and fry steak instead of boneless chicken..... And two, there's a lot less calories in the turkey than the beef, almost a hundred calories less per 4 ounce serving. And three, fruits and vegetables cause more food outbreaks than meat, so if you're going to be squeamish about ground poultry, fruits and vegetables should terrify you. Or you're just being irrationally silly about germs.

when you use whole tomatoes you get seeds which will make your sauce bitter. you can seed them, or buy diced or processed tomatoes, where the majority of the seeds have been mechanically removed. The flavor difference between whole and processed canned tomatoes is negligible, leaving the seeds in makes whole tomatoes much worse than processed, and seeding the whole tomatoes isn't worth it, you basically have to wash the tomatoes to get rid of the seeds, and you lose the tomato sauce/juice they were canned in.

The problem with romaine is that we have home growers out there that feel the need to be defensive about their lettuce and can't use their own discretion about substituting it in when a recipe, that isn't hard in stone, calls for kale for once.

I simply find romaine to be a bit flat and flavorless. But, I do like it’s crunch and freshness. Not personally a huge fan of kale. I really love to use spring mix, arugula, or frisée lettuce. Mm! Now I want salad.
